Great video. Would love to ask for a French butter cookie recipe, specifically one that is close to a Le Petite Beurre cookie you can buy commercially. They are pretty unique (almost shiny) and helped us get through-so far-this pandemic. Yes, I could buy the,, but i want to make them (and even bought a mold). Thank you for great recipes!

Bob's Red Mill has an egg replacer, maybe you can try a 1/4 cup of applesauce or a silken tofu blended? I would suggest a chia egg but it tends to add a nutty flavor to milder flavored foods like vanilla wafers

I would contend that one could cream the butter and sugar together with a rubber spatula without having to dirty one’s electric mixer. But to each their own.
I’m going to try these because wafers are so expensive per box and when you’re making a huge batch for an event you spend $20 on 4 boxes of cookies. I don’t like generic wafers.

They will get soft on the icing after a little while but they will work. 😊

This recipe produces puffy soft inside cookie nice try
If they were soft they either were too warm, not baked long enough, or an ingredient was accidentally mismeasured. Hope that helps!
