I had so much trouble trying to tighten the protection ring and did not know that it could and should be tightened AFTER closing the top cap, through that little hole from the outside, hence creating the required compression from top to bottom of the headset. I have a Neuron 2023 CF SL and it has the same structure with ACROS integrated headset cables. There's play in the headset from the minute I received the bike and still after numerous attempts it's either too tight, or too loose. Canyon should pay you for the great service you do for them. The internal cables through the headset is such a bad idea!!!
I've done a similar service on my Lux (same headset routing). The only difficult thing I found was only having two hands :) Can be hard to hold everything and line everything up while offering up the fork.

The cable integration is not related to any particular brand but to bike industry instead. The only advice I can make is to use that shimano bearing grease inside the bearings only and for assembling parts and rust protection choose a carbon compatible grease instead.
it is kind of odd. Not like aero matters on an MTB. Truth be told, as a 90s kid i am partial to external cables, it always reminded me of the hydraulic lines on excavators and such

cable routing through the headset is a huge red flag
So in nowadays you can see how everywhere designers make our lives harder

You have to undo,dropper cable,rear brake hose,and gear shifter cable to replace the top bearing 🤬

Why do you even need this on the hardtail? It doesn't even looks cleaner than regular internal cable routing.

After removal of hydraulic cables from brake lever can I reuse them or do I need to instal new inserts in hydraulic cable and then reinstall them?
Yes you can reuse them. If you do it carefully enough there is no need to bleed.
