    Finally! I’m on the fence about building a 500 gallon because It May be a little too much for me to handle. Thank you for all the info in this video. I may just be able to pull this off.

      It’s not half bad. Just slow progress and lots of grinding and welding.

    How thick is the metal? Is it 1/4th or .218? also, have you cooked on it in near 0° temps? Just wondering how the 500's hold up compared to the 250's

      The cook chamber and firebox shell are about 5/16 to 3/8 according to a tape measure I have.
      The smoker is not finished yet so I don’t know how it would preform in those temps. Also I am in Georgia so I don’t think I’ll ever get to experience using it in that kind of weather.
