That insulated firebox will make a difference here in Canada 🇨🇦 but I always doubted you guys needed it down south Although if it makes the box more efficient, it would make it easier to maintain your fire. Regardless of outside temp. And it would also burn less fuel. Insulate your box!
I’m jealous! I’m catering up in PA and would love to have a pit this size! I’m running on 2 offsets right now for most of my jobs and it’s tough but one day I’ll get a rig this size

7:43 welds were definitely a little cold here on that hinge for your door on the left. Turn up the heat. and hang in there a little longer. Incorporate a weave maybe.
I actually have two of these old tanks and I thought about turning morning to a smoker and grill myself like in one compartment short and the other one loan just for the purpose of being able to do things like cook a whole big or mustard chicken wrap one time while I cook burgers or grill shrimp and stuff like that on the other side
"...not gonna use air-gap insulation on the studs of my house..." Not to worry bro - I just imagine once the studs of your house catch it'll be hot enough of a fire that your flue will be drafting nicely, yet you'll still get the flavor from the curtains on the meat.
I believe they cost a lot more. I thought about single door but didn’t want to lose all the heat when I opened it up and that is why I went with the removable middle grate tracks for a whole hog. You could probably get double doors on one side and a single door on the other side if you wanted.
@@korycoleman removable tracks in the middle only for the one in the center correct and is there a reason why you didnt drop the bottom grate to line up with door for just a little more space you think that is a good idea or bad
@@soloM81 mine are removable only in the center middle track but you could have the tops removable too if you wanted. Mine are above the opening because I wanted them to slide out. The tank is 37” in diameter so I didn’t want to have to reach my head in there with a fire going. They can do it either way.
I’m waiting for my 250 gallon. I think I want mini me version of yours. LOL. Is the connection with the fire box and cooking chamber a little different? It seems the main chamber comes off the top of the firebox more than the end. Anyways it’s beautiful. I am patiently waiting for my turn. Congratulations.
I think the firebox is just a bit lower than the stack which is good in my opinion. A 250 replica would look sweet! I had spoken to a guy who is getting a 250 and the length was about the same as the 500 so maybe you want to go all in and get the 500? 😂 now that I have spent your money I will let you be. Lol

Can put a hinge on the stack ! About 3’ up cut stack then add a plate on each side with a hinge! When traveling hinge to top of smoker
