    Just received my new Hunsaker 55 and seasoned it yesterday. I'm hanging some ribs in a couple days for the maiden cook. These cookers are well thought out and quality from top to bottom. Mark and Ryan were a pleasure to work with.

    Do you notice any difference in performance? Do the bigger tires and wheels put any strain on the motor?

      @@zachfoster-x1c I am at 200hrs and haven’t noticed any difference. But we do run it in Low on our trails around the property. Definitely don’t bang around on it.

    You have owned many Shirley smokers now, from the straight flow to reverse flow, which produces a better brisket? Which one has better bark.

      @@dmdm9198 I think you can do great on both but I believe the direct flow is a little better for brisket. It definitely takes a little longer to cook but for whatever reasons my bark is better. I’m getting ready to cook 16 briskets for a fundraiser and I am doing them on the 500 gallon with the 250lbs of pork butts and sides going on the 24x60 reverse flow.

      @@korycoleman thanks, think Iam going to add a straight flow to my collection of Shirley's, do you keep them all or do you sell to get another Shirley. Have you used a water pan on the reverse flow, if you have did you notice anything different in food and Pitt temps, going to try that out one of these days

    Can put a hinge on the stack ! About 3’ up cut stack then add a plate on each side with a hinge! When traveling hinge to top of smoker

    "...not gonna use air-gap insulation on the studs of my house..." Not to worry bro - I just imagine once the studs of your house catch it'll be hot enough of a fire that your flue will be drafting nicely, yet you'll still get the flavor from the curtains on the meat.

    7:43 welds were definitely a little cold here on that hinge for your door on the left. Turn up the heat. and hang in there a little longer. Incorporate a weave maybe.

    That insulated firebox will make a difference here in Canada 🇨🇦 but I always doubted you guys needed it down south Although if it makes the box more efficient, it would make it easier to maintain your fire. Regardless of outside temp. And it would also burn less fuel. Insulate your box!

    your thoughts on pigironpatina seem to cost more then Shirley so a 500 is the way to go you think going for one big door is better

      I believe they cost a lot more. I thought about single door but didn’t want to lose all the heat when I opened it up and that is why I went with the removable middle grate tracks for a whole hog. You could probably get double doors on one side and a single door on the other side if you wanted.

      @@soloM81 mine are removable only in the center middle track but you could have the tops removable too if you wanted. Mine are above the opening because I wanted them to slide out. The tank is 37” in diameter so I didn’t want to have to reach my head in there with a fire going. They can do it either way.

    I actually have two of these old tanks and I thought about turning morning to a smoker and grill myself like in one compartment short and the other one loan just for the purpose of being able to do things like cook a whole big or mustard chicken wrap one time while I cook burgers or grill shrimp and stuff like that on the other side

    If you are using the weber wax cubes then yes you are ending nothing but lighter fluid. I started off using those years ago but quickly started using the royal oak tumble weeds.. much better and quicker

      I’m waiting for my 250 gallon. I think I want mini me version of yours. LOL. Is the connection with the fire box and cooking chamber a little different? It seems the main chamber comes off the top of the firebox more than the end. Anyways it’s beautiful. I am patiently waiting for my turn. Congratulations.

      I think the firebox is just a bit lower than the stack which is good in my opinion. A 250 replica would look sweet! I had spoken to a guy who is getting a 250 and the length was about the same as the 500 so maybe you want to go all in and get the 500? 😂 now that I have spent your money I will let you be. Lol

    Do they sell the 150 with an insulated box? I come from the kamado joe world and love pits. Problem is my kids, I don’t always have 12 hours to be in front of a pit tending to the fire every 20 min. What are the potential trade offs or cons of a 150 gallon pit with an insulated fire box?

      They can insulate any of their fireboxes if you want them to. I don’t think there would be any negatives to it just that it would cost more. My 150 was 1/2” and it would take a split every 45min or so.

      Not at all. I loved this offset and it is the reason I moved up to a 500 gallon from Shirley. My only regret of getting it is that it caused me to want a larger one. LOL They are known for reverse flow but they can do it all. The 500 draws like no other!

      @@mannyr8795 I bought this one used. I’ve had 10 Shirley’s. No regrets on any of them. They do have a waitlist but I think it is good to make sure you get what you want. When your name gets called you are like a kid on Christmas. I’d go for it!
