Meals in Minutes - Frozen Chicken in the Instant Pot - Adventures in Everyday Cooking

Tonight I decided to record on the fly... almost literally. I had a very busy day and got to 5:00pm and went, OH CRAP--FOOD! When there are 5 other people in the house besides me and not enough leftovers to go around, this is the moment you either order pizza, or take-out. But with just a little advanced prep (and I do mean, very little, I cut chicken two weeks ago and stuck it in a freezer bag in my freezer), some left over rice, and some frozen veg... dinner is on the table in a little over 35 minutes. Not bad for forgetting I had to feed people YET AGAIN.
There is no recipe for this... I literally used 1 cup of water, 1 bottle of Panda Express Stir Fry Sauce, raw chunked chicken (frozen), and set my instant pot for 14-16 minutes. BOOM. Delicious chicken and my family never knew I forgot about them.
I'd like to also say that this is only the first or second time this has EVER happened to me... but alas, I would be lying. Which is the reason there is diced raw chicken in my freezer.
And thus starts a new series... MEALS IN MINUTES!
