  • For me, Steamed Clams have turned into a fun and exciting dish to snack on. It really has that jaw dropping ooh and awe effect on people who really appreciate a whole plate of them when they hit the table. These are Little-Neck Clams and for me, they have a very impressive and distinct taste. Not to mention they are fun to cook.     I found this after doing a clam dissection in marine biology. Never really eat seafood, let alone see how it's cooked. Didn't know you eat *everything* within the shell. It's interesting how literally all of the bivalvular organs are edible from its foot/"tongue", muscles, to what's left of its mantle. Super interesting. Seems like everything shrivels as it's cooked, and from it shriveling the outer stretches of muscle that fasten the mantle and gills down separate and retract to the middle blob of cooked clam meat, causing the clam to "open", and causing it to be easily edible and pliable from its shell, and not simply because the clam is dead. Like I said, super interesting.

    Thanks so much for this recipe! I have been searching for something like this for years. My wife and I had almost this exact recipe with a little wine and some whitefish on our honeymoon in Washington, but being Midwesterners we had no idea how to make it. Making this brought back many fond memories.

    Just tried it. It was amazing. Added some siracha into the broth and sprinkled lemon juice over them when i took them out. Instead of scallions, I used green onion and didn't add the olive oil.

      Victoria H Just get a nice stiff plastic-bristle brush from Walmart and scrub the outside shell of the clam real good under cold water. You'll get any sand or grit off that way and remove any type of algae that might have been growing on the clamshell that could follow the taste of your clam broth afterwards.

      Oh! And I made a second batch yesterday, this time pan frying some leftover bacon with the butter and garlic. WOW! Even better.

      Im in Kent WA. There's a lot of seafood restaurants and Asian stores that sell fresh seafood, plus there's always a lot of fishermen with boats up here in the Pacific Northwest with fresh catches daily.

      Don't I know it. I worked for American seafoods out of Seattle and fish the Bering seas in Alaska when I was a younger man. I have a brother that lives there now too.     My only adjustment to this technique is to soak the calms in heavily salted water for about 30 minutes and carefully drain, watching for sand that has sunk to the bottom of the bowl. I like to steam them in wine and garlic and add parsley or arugula before serving. And a good baguette with good butter is a must to soak up the juices. Clams are salty, so no added salt is really needed. To fancy it up you can add a bit of tomato paste and a bit of saffron.
