Hi Anita my dough was very sticky so i just kept adding oil then flour. The bubbles didnt form like yours mine were much smaller and popped easily. Once finished they were very tasty. Thanks
Dear Stuart, The only reason your dough will become sticky is when too much water is added. To make the perfect roti dough you only need to keep one thing in mind is the measurements. Use the same cup to measure the hot water and the flour. The ratio of flour to water is 2 : 1. If you used 2 cups of flour then use 1 cup of water. Also if you have a food processor you can use it to make your dough using the above measurements. Let me know how you go. Regards Anita.

Miss Anita, I don't know what's the time where you're, but it's 2.16 am where I reside, and I had to tell you this right now; I can't wait any longer. Oh my gosh! I tried your recipe with the HOT water, and it was a miracle! My roti WITHOUT baking powder, for the first time, came out perfectly! Thank you, thank you, so very much, I've learnt something new today, due to you. I've always made roti "with" baking powder, and it came out perfectly every time; very soft, and round. I usually make a dozen at a time, freeze, and reheat in the microwave as needed, and they'd be very soft, as the day they were made. This roti WITHOUT baking powder, I've tried once before, without success, UNTIL TODAY! I think it's because I didn't use HOT water before, and neither did I rolled out the roti, as thin as required. I'm having a piece of hot roti right now, with some pumpkin talkari. By the way, I've watched a few videos with people making roti, without baking powder, and the roti puffs up very nicely, so I thought it was some kind of special flour they've used, but I now know, that it's NOT any kind of special flour, because I've used Five Roses, all purpose flour today, and NO baking powder, and my roti's were perfect! Dear Kitiana, You are welcome. You can use ghee as well, but I only use oil when making the dough. After the roti is cooked, then you can use ghee, butter or oil but the oil is the healthier version. Trust me they all taste great. I even use the non - stick cooking spray to lubricate the rotis after cooking when I am in a hurry. Keep safe. Regards Anita.

Dear Kitiana, You are welcome. You can use ghee as well, but I only use oil when making the dough. After the roti is cooked, then you can use ghee, butter or oil but the oil is the healthier version. Trust me they all taste great. I even use the non - stick cooking spray to lubricate the rotis after cooking when I am in a hurry. Keep safe. Regards Anita.

@@anitasguidetosimplecooking so I made roti last night for dinner and I cant believe how perfect they were😅🥰 thanks to you my boyfriend really enjoyed it and he was so proud of me coz in the past 4 years we been together, I didnt attempt to make roti once haha😅 and he was like "wow it's so soft" and I said I just followed all your steps🤗 I'm so glad I've made it perfectly for the first time (finally)...I noted the rule of thumb with the flour and hot water but what about the oil? do I double the amount of oil if I do 4 cups flour next time? and can you do a video of how to make fiji dhal 🥰 please
