Fiji Hindi Instant Coconut Ladoo (Diwali sweet)
Instant Coconut Ladoo
Ingredients:
• 1 1/2 Cups Full Cream Milk
• 3 Cups Desiccated Coconut
• 1 1/4 Cups raw Sugar (Or White Sugar)
• 1 Tbsp Ghee
• 1 Cup Full Cream Milk Powder
• Extra Desiccated Coconut For Coating
• 1/4 Tsp Green Food Colour
• 1/4 Tsp Red Food Colour
Method:
1. Take a non-stick frypan, put it on low heat, add ghee and heat it until the ghee has melted.
2. Add coconut and roast it for 3 minutes, stirring it continuously.
3. Add milk and keep mixing it and cook it until the milk is absorbed and the coconut has become soft.
4. Add sugar, continue stirring it and cook it until the sugar has completely dissolved. As the sugar melts, the mixture will become runny . Continue cookin...

This looks yummy! We have something VERY similar in Brazil; they are called beijinho (meaning little kiss). The main difference is the use of spices. We don't use the spices used in your recipe, however we do (traditionally) top it with one clove to add a faint aroma to the beijinho (but we do take the clove out before eating it)

Great tips! Thanks for sharing darling. I always have to throw out garlic, because I don’t use it fast enough. I do use a lot of garlic though. I don’t like the jar bought stuff. I reckon the fresh is better.
Dear Paul, You are welcome. I also never use garlic from the bottle as well. Once you take it out of the freezer , soak it in some water for 1 minute and you can grate it using a fine grater or mince it. I always use my garlic this way. My family absolutely love garlic. Dear Atunaisa, If there is too much moisture in the peas while frying, it may pop and also the oil will splatter. Oil and moisture don't go well together. I am not an expert. It is only a suggestion, add half teaspoon of salt in the oil to stop it from popping and splattering. You can also use a splatter guard. Regards Anita.

Anita, I was looking for recipes to see if I could find an approximation of one of the best curries I've ever had, a goat curry in Suva thirty years ago, and gave your recipe a try this evening. I started it off in ghee, used a hot Madras curry powder (no need for the extra chilli powder), and left out the coriander leaves... and it was perfect, exactly like the one I remembered! Absolutely delicious how have I never had this before. Just made it for the first time. I was looking for a recipe for something like lemon bars as I had been given a bag of them.
