That is feasting my eyes. Good to know what carne asada means in the traditional sense. I don't often see beef ribs grilled on charcoal like that. I have not done that for ages. Time to revisit!
Carne asada is what you grew up with. Keep the marinade simple and have some tortillas ready to make tacos. The soft ones and some that you leave a little longer to get stiffer and charr. Have some veggies roasting for a salsa, if you have leftover carne that’s getting old use the salsa you made and pour it onto the sliced carne in a sauce pan with diced potatoes. Make some rice on the side and now leftovers seem like a new meal.
Carne asada to me is.. all the familia , tios , tias , primos , getting together with tortillas , beans , arroz , mexican beer and tejano music all night !!

just like Arlie said there is a lot of different styles, but the real northern Mexican way(where carne asada comes from) is to cook way to cook with, garlic powder, salt, lime juice, pepper ,on beef previously marinated on beer.
That spread looks unbelievably good! One thing I would add, even though it is more of a California thing, is a nice Tri-Tip. Has become a family favorite, and at least in Okla, is only about $2 more per pound than ground beef.
God bless! Thank you for keeping it simple and classic and smart, Arnie!
