Watching you cook traditional Mex-Tex food, reminds me of my time in the Air Force at Lackland AFB in the early 70's. I whenever possible, I would adventure away from the base and look for authentic cantinas to eat. I really miss the good food. Seeing you cook and learning your methods...I'm going to give it a try here at home!!!
Removing that fat from the Ass end of the chicken really took my spatchcock chicken to another level. I like grilling it over mesquite lump charcoal which I suppose isn’t ideal since it burns so hot, but that one tip helped prevent burning and excess soot. 10/10 great advice ArnieTex
We only use mesquite lump coal in South Texas... while I like the flip flip method at low temp, I prefer the red hot into the fire fast cooking method myself... if you do it right, there will be no juicer chicken around
I'm a 60yr black dude and I been viewing Mr Tex for a long time I say he the best cook of all times and he is all so funny keep up the good work 👍 God bless him 😊
When my old man taught me, there were no meat thermometers, other than oversized contraptions to measure the heat in a roast or soup. Keyboards only existed on a typewriter. BTW my Dad made some pretty good grilled/barbequed meat and veggies. Not perfect but always worth eating.
I know a lot of people who cook without measuring ingredients, watching the time, or measuring the temp. It's fine but they usually have trouble making something consistently good or same flavor and quality
I made this chicken tonight on my Weber Kettle and it was some of the best chicken I've ever made! I cooked it over some good lump charcoal with a chunk or two of hickory. I let it cook on the indirect side for about 25 mins and gave it Arnie's flippity-flip technique for the last 10 minutes or so. It was super moist and very delicious - thanks for the awesome video!
Man, I’m 50 seconds in and you are so right about the meat thermometer. I always use mine and have had so many people tell me that I’m “not a real griller” if I have to use one. Now I just tell them that if you want repeatable results you do.
When he said not to listen to those keyboard haters saying they don’t need a meat thermometer & the reason they are typing is because they are still chewing on their over cooked chicken!! 😩😭🤣 BAM! I’m sold!… liking and subscribing. 😁
This is exactly why I subscribed to you, Arnie!! You always have fantastic content!! Please get a Gabbys Grill. And, show us all more open fire recipes on it!! 🙏🙏🙏🙏🙏 I would love to learn your cooking techniques on one!!
I just want to say I have been watching you for a while now me and mu daughter have tried a few of your recipes and I can say wow you have changed the way I cook just wanted to say thank you
I'm not sure how your channel came up on my videos pero, when you said South Texas, and I saw your BBQ, I was like, "no way this guy is from San Antonio or ATX." I was pretty sure you were from the RGV. Finally confirmed it today. Ya esta haciendo hambre with your videos! Saludos desde Harlingen brotha!
There’s just something about a perfectly grilled Pollo Asado a la Carbon that I love. And your video shows it being done right! The church I attended often had 1/2 chicken plate sales. They were so good but then they started doing the 2 quarter legs instead of the 1/2 chicken. I like the way the 1/2 chicken looks better.
I tried the wow seasoning for the first time. Marinated some drumsticks for 24 hours. Threw them on a charcoal fueled grill and it was an amazing flavor. Very delicious
Great Video! Your Grilling methods were Spot on. We do lots of chicken like that in Northern California on Santa Maria Pits with Almond And Oak, Definitely a crowd pleaser, Nice work Primo🔥🔥🔥
I buy everything based on reviews. Some said this was hard to put together ruclips.net/user/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt some guy said 2 hours and 2 beers later. I didn't drink beer like I was going to. I didn't feel like going to the store. I'm assuming I would have had at least 3. I took my time. Stepped outside for a cigarette break a couple times but all in all it was about a 3 hour project for me but it wasn't like it was difficult or anything . Only pictures but everything is pretty organized and labeled although I didn't see any #s on the actual pieces like it shows in the diagrams. Only the screws were labeled. On the cardboard part of the packaging on the back side. I put it together in my living room too. It wasn't supposed to rain today but it's Michigan and I couldn't wait so I put it together in my living room. Without beer but beer would definitely have made it more fun that's for sure. I'm giving this a 5 for easy assembly. I'll update after it stops raining when I can take it out of my living room and cook some food on it. Hope this helps at least for people who think they can't put this together because I did and you can too . And there are extra screws. I got nervous and immediately came here to see if others had the same experience and they have. You're not doing it wrong. There will be extra screws. Be patient. Don't rush it. Drink beer. Happy assembling

The smell of Pollos Asados Restaurants around where I live is the best. I even have a Molino right behind my house.
I'm surprised your neighbors don't float over the fence drawn by the smell like in a cartoon.
Yup!
LMAOooooo!!! 😆🤣😭😩😭😭😆🤣😆😭😆

I would, if I could!
People usually don't flock to burnt food. Hahahahaha!
@@texasforever5776 they wouldnt flock to ur raw unseasoned chicken either lol
I'm a 60yr black dude and I been viewing Mr Tex for a long time I say he the best cook of all times and he is all so funny keep up the good work 👍 God bless him 😊
Arnie, that chicken looks absolutely amazing. I’m surprised that your neighbors aren’t over to eat. Fantastic job. Pops Allgood.
I find that leaving the backbone in is the most flavorful.
When my old man taught me, there were no meat thermometers, other than oversized contraptions to measure the heat in a roast or soup. Keyboards only existed on a typewriter. BTW my Dad made some pretty good grilled/barbequed meat and veggies. Not perfect but always worth eating.
But now that we have technology, wouldn’t it be wise to use it ?

Sunflower oil is nice and light and makes crispy fried things and is very healthy. Way better than corn or veg oil.
