There is a really cool open source community who have created open source projects for the CarThing such as Nocturne. Gives it almost all its functionality back.
There is a way to keep the car thing working after Spotify kills it. I plan to keep using mine once I have to time to load the new software on it. One cool thing about the new way is it will not need to be connected to your phone, it will run as basically another display from your computer. I am running LINUX on my main PC, but I believe they have come up with options to make it work on a Windows PC as well.
Yeah the great thing about this is it makes the carthing better as a desk accessory than before. I bought one because of this channel and then gifted it to someone because of the audio switching issue, now I am getting it back :)
You can still use your spotify car thing, there has been multiple creators here on youtube, that makes guides of how to install custom os on it, so you can have the same functionality without spotify behind.

I used to work in a diecasting plant and some of the older machines that lacked a computer to run the automation also lacked a shot counter (One shot being every time the machine made a part) So the casting guys would nail one of these to something closeby and wack it for every shot. Those old units were pretty funny because they still had automation, except instead of using a computer and a floppy drive they used some sort of logic circuit. So you would have to manually turn dials and flip switches for every program.
Instead of tape, I get darkening stickers. You can get a pack of various sizes/shapes for pretty cheap from Bezos. This way you can dim it so you're not blinded/kept up, but can also still see when it's on.
im so glad you brought up the "MOOER PE100", i play guitar and have been looking for something like this, just lives on the desk out of the way, there when i want it, your a freaking life saver!
Car thing is open source and is open for public use! You can install Linux as well as other software‘s, use it as it’s intended and even customise it! No need to get rid of it, its still a great desk tool

Finally, someone else who uses the AudioBox GO! It may not be the best audio interface in regards to technical specs, but I loved the exact same attributes you did about it: the compact form factor, as well as great cable management due to the inputs being placed at the back.
I am looking for some sort of small "days / hours since" timer, haven't you seen something like that somewhere? Like a small digital watch with a single reset button that counts up time. I would get a dozen of them and stick one on a piano, one on an air bike, one on an inversion table etc and then reset it every time I use a given device / do a given activity. I do this via Android widgets on a phone now, but having physical devices would work better for me.
A Espruino Pixel JS, a case (3d print it with a service like PCBWAY or a local library), and some chat gpt assisted code could really easily make this.
So the CarThing thing. Why not use an old mobile phone connected to your home WiFi to play/control your Spotify on? ... I am soon to be setting up my first work From Home setup and I am keen to have a separate music player to interact with so I am looking at options.
5:00 just get a cheap android tablet or kindle if all u need is a music controller. although I totally understand the want for a small screen that's limited to apple car play. that's sick but it aint very practical knowing u could get a decent android tablet for around $100

You can probably fix your issues with the CarPlay display by messing with Shortcuts/Automations
