  • On Today's Episode:
Deciding what to eat for breakfast, lunch or dinner is a bigger decision than you know. While many of us base our meal choices on convenience, time, money, and taste, the frightening truth is that we are actually deciding what our cells will be made of, and too often we’re making sh*t choices.
Changing your overall health means understanding that food matters in ways that we don’t really comprehend. Shawn Stevenson is joining Tom to share life changing data from research and perspective on foods, pharmaceutical use, and physician diagnoses that are more than shocking! Shawn is the author of the international bestseller Sleep Smarter, and his latest book, Eat Smarter.
In this episode, Shawn opens up about his personal experience being diagnosed with a chronic, debilitating disease at 20 years old, and what it meant for him to take his health, his life, and his power into his own hands. This discussion lays out all the reasons why and the ways how you can take control of your health and stop giving that power to people that aren’t living with your pain, your suffering, and poor health. Our society isn’t making the best decisions for anyone’s health. You can be the victim or the hero of your life in this story, the decision is yours to take.
“The last 30 years have been marked by exchanging what worked for what sounds good.” -Thomas Sowell

    QUOTES:
“Inflammation can get drug through the mud as this bad thing and we want to stop all inflammation, but inflammation is critical for all functions of life.” [0:50]
“When you’re eating food, you’re not just eating food, you’re choosing what you’re making your cells out of. Every cell in your body from your heart to your brain is made from food.” [16:43]
“We’re the sickest society in the documented history of humanity. We have the highest rate of chronic diseases ever known to man and we’re supposed to be so much better than this.” [36:24]
“Right now we’ve created a culture of sickness, and so to be healthy you’re weird as f*ck, to be the healthy person.” [47:09]
“When we start to move away from the behavior patterns that’s causing the problem, the body knows how to fix itself.” [54:10]
“Every thought that we have creates correlating chemistry in our bodies instantaneously. It’s happening 24/7 always, and will never stop.” [59:36]
“In 2020, two-thirds of the United States congress members received a check from a drug company.” [1:14:03]
“Whether it’s self medicated or your doctor is your dealer, we have a culture that is seeking to suppress our pain, physical and mental, instead of removing the root cause.” [1:22:14]
“That first physician, when he said I’m unhelpable, it gave me a permission slip to stop fighting and I took it.” [1:30:17]

"We're not living longer, we're dying longer". Absolutely spot on!!! Had an instructor tell the class I was taking that people's bodies are taking longer to decompose after death, so much that embalming is really unneccesary... due to all the processed foods & preservatives in food nowadays (this was 16 years ago). Having changed my bad eating habits, cutting out so many bad foods & changing to a whole food due to chronic pain & health issues and seeing the positive changes and decrease in inflammation, weight & pain throughout my body... I am a believer!!! This is an amazing interview! I am taking a lot away from this and will be getting his books... my food for thought & health! ❤️

At 53 mins in, when discussing diabetes, he carefully worded "we suck at fixing it." As a healthcare provider, I can attest to the accuracy of this statement. We are very good at "treating" diabetes along with other modifiable illnesses, but very bad at "fixing" diabetes. Today's medicine is aimed at sick care, not health care. That's the importance of having a food coach/dietician, a fitness coach/personal trainer, etc. Much like the swimming analogy, if you jump in the deep end of the pool but don't know how to swim. You no longer need a swim coach, now you need a lifeguard. You needed the swim coach way before that. That's how fitness coaches and healthcare providers relate to your health and wellness.

Idk if anyone has said this yet but to answer the olive oil question... olive oil has a low smoke point, between 300-410 degrees F or so, depending on the type of oil. Once you heat it past that point, it essentially starts to burn and the beneficial omega 3s that are normally in olive oil that help with inflammation...can actually convert to harmful omega 6s that cause inflammation. That's why oils such as avocado or grape seed oils that have a higher smoke point should be used for cooking, and olive oil should be used cold.

I also use Olive oil in some cooking but not for high-heat cooking like frying but sauteing or drizzling on salads or bread dipping. You are correct it s not meant for high-heat cooking. Also, not all Olive oils are equal, not even all Extra Virgin Olive oils are equal. The cheaper ones are probably useless to use for health. I use one called Dessert Miracle, it gave me a bit of sticker shock when I found it but I tried it and I like it.

None of the dr. or specialist identified this as the source of the problem. Everyone wanted to just manage the condition with steroids and pills. I was told she would have to live like this the rest of her life. Then I came across a story on the Internet about a woman that underwent the same health problem. When I mentioned to the allergist my suspicion it was dismissed until the orthodontist (she listened and found it in the literature) took the braces off my daughter and she started to heal. The healing process has been a roller coaster these last 3 yrs but with endless days of research and changes in diet my daughter condition is better. ❤

In Spain we use 2 diferent types of olive oil, for heating we use the refined one, lower acidity (0,4°), supports better the heat.
Then the Extra Virgin (1°) for any raw application : on pasta, bread, salads, rice, ... anywhere, délicious
Remember, in Spain Olive Oil is not food, it's religion :)

Let me first say: I totally respect this comment, the Spanish culture, and Olive Oil🙌🏾.
I also live in Europe, and the challenge I see here is this:
      1. Europeans differ in their opinions of what healthy is (be it Olive oil, Fish, Wine, or whatever). The stylish Italians, the gorgeous Spaniards, au Couture French, laid-back-cool Portuguese, etc., each has the influence of their own culture (and Mama’s cooking!) to say what is “healthy” or “better”.
      2. I have never, in all my travels through these awesome cultures, seen a
“Mama” or any cook, measure the temperature of oil. Sorry; never seen it. Mama just puts her finger in the pan of oil, and says: yes Amore, now is ok to put food inside the pan. This can vary all the way from simmering, to WTF! Did you just burn two layers of skin girrrl?!!
So, there is I think, certainly a romanticism, from perhaps non-Europeans (?), of how Olive Oil and the people it belongs to, how they “just instinctively” know how to heat it, or eat it cold, or how store it, which regions’ olives are better, etc. Even within the Mediterranean there are varied opinions. And even in the Mediterranean there are different oils sold for frying or eating which are not Olive based. Rich, poor, wealthy, healthy people exist everywhere; and not everyone is going to afford only the best oil fried at precisely 0,xxx Degree).
Europe may seem sexy (and it is😉) but it doesn’t mean they are people born just knowing how to be healthier -especially since the big EU cities have a crazy abundance of fast food now.
I wanted to point this out simply because we’ve all got alot to learn and new discoveries come to light. Maybe Mama DID know the best oil temperature, or maybe she just did her best not to burn the food yeah?🤷🏽‍♀️

Then I learned about the raw food diet, and while I can't live that way it certainly does make one thin, and change one's metabolism in a most positive way. So now I plan meals around vegatables and fruits, that works for me/ Except I'm doing a ton of food prep and clean up. I was told 15 years ago by a spine Ortho I would be in a wheelchair in 5 years… Not in a wheelchair yet… My body is full of spurs all over.. It has been a journey.. So much to learn.. When I got a nutritional study done by Spectracell that really started to shed light on what was happening.. Had multiple vitamin and mineral deficiencies.. Then started to figure out why.. I totally agree you need more than 1 opinion on your health issues.. A few things I know for sure in my body-my Vit D level has to be at least 70, my body needs magnesium, I can’t eat over 50 gums carbs per day, I need a lot of protein-40% of my calories, I need Vit K to push the calcium in my bones.. I have to take the digestive enzymes with bile and HCL to digest my food so my body will even absorb the nutrients from the food I eat… Fast food is poison to my body… If a doctor is not helping you then move on.. Omega 3 is my friend.. Buy good quality supplements that your body needs based on lab results… Functional medicine md has helped me a lot..You have to be your own advocate… You have got to help yourself..

Educate yourself about oxalates. Do a search for Sally Norton on YT, the queen of oxalate education. Oxalates cause every kind of disease out there. They bind to minerals, so you are not getting minerals from eating veggies. Grains and nuts are high oxalate foods, as are curly kale, Swiss chard, beet greens and beets, sweet potatoes (actually all potatoes), dark chocolate, kiwi, blackberries, raspberries, turmeric, black pepper, and on and on. Oxalates are like eating asbestos, little chards of glass. One of the anti-nutrients in vegetables and fruits. They cause huge joint issues, and bone loss, because the oxalate are grabbing the minerals it needs to survive. Try a low oxalate diet for 30 days and see how you feel. You have nothing to lose except pain.

PS. Olive oil and eggs have a special benefit is what I know. It doesn't take a long time in tha pan to cook them and I will dare say that there is some unknown benefit. That is kind of based on a wound cream over 100 years old recipe that is made with olive oil. The almost 100 year old woman that gave the recipe was frying two eggs in the olive oil before using it for the cream. She said that they release healing properties. I am still making the cream, especially for open wounds and it does amazing work especially for burns and painful cuts. What and why, nobody knows. We just follow the old knowledge.
