You're absolutely right-it could be written that way as well. We could even leave out the relative pronoun 'which,' making it sound a little more natural: 'The movie we watched last night was really interesting.'
I do not understand* Am is used to describe a state of being. You being sad for example is a state of being. When you don’t understand something you are doing something so you use “to do” which in this case gets turned from “do not” into “don’t”
