  • In today's episode, we talk about how you can Learn How to Cook Without a Recipe or Cookbook. After responding to a viewer's comment I decided to make this video to see if you find the information useful. I had a lot of fun making this video and we also made up a new delicious recipe while we chatted.

    Love how you incorporate notes from your viewers, this is such a great video. I think it is well needed as many people don't know how to cook on the spot. Keep doing what your doing wonderful content! The nice thing about making mistakes in the kitchen it's only one meal, the more you keep going the better you get. My hubby is a lot like yours he will never say an unkind word about my cooking no matter how big the flop. I asked him why...he said that if my recipe did not work out I would probably be harder on myself then he could ever be...he said that saying a kind word cost nothing and that if he was kind maybe I would be kinder to myself.

    As i was washing the stuck on cajun herbs from the pan after cooking cajun chicken i decided next time I'd make a gravy with it. Well the next time came and it turned out great. And i put that down to you inspiring me to think differently about cooking. So thank you Stacey.

    that pasta looked restaurant worthy. a piece of garlic bread and this would cost 15-18 dollars in states of USA. looks so beautiful. that's a meal in itself.

    Hi lovely lady,thanks to your inspiration i am working through my freezer before a restock,just last night hubby and i had apricot chicken i had a family size that had been there for one and a half years that i vacuumed sealed so i cut the backbone out flattened it,sprinkled it with some french onion soup mix,mixed up some apricot jam with hot water gave it a bath and slow cooked it,put some chips on a tray best fakeaway ,we will be having the rest of the chicken tonight the it would easily stretch to feed six but my hubby at the dinner table is like trying to stop a race horse at the starting gate.Sending love from Australia Lee❤🦘

    I am 2 weeks post op for gastric bypass surgery. I need to get as much nutrient dense protien food. In as possible. Having to think out the box. Got a few pate recipes perfected including cod liver pate. Thai fish cakes. Things like that. Love watching your channel

    My mom refused to cook after she went back to work. With both parents working, it sort of fell to 12 year old me to do the cooking. There were a few times when my Dad binned the meals... but... I learned 😂

    Binge watching your videos, I enjoy cooking now that I have more time being a pensioner. I loved how you mentioned your husband's comments on your food, even on a bad day. Fortunately my hubby is the same, just makes all our efforts worth it, on good days and bad.... a little bit of encouragement and gratitude go a long way. ❤

    I have a massive tomato harvest at the moment. I've made sauce and paste and dried some and of course, I use them fresh.
    I make a big pot of soup, then the next day that becomes a base for a pasta sauce and then the next day the leftover pasta (my husband and I aren't huge eaters so it goes a long way) gets shoved in a dish with some white sauce and cheese on top and becomes a pasta bake.
    Many sorts of soup (mushroom or pumpkin for instance) can be used as a base for other things if you have too much. And soup is an excellent example of things you can make without a recipe. It also freezes really well if you don't want to reuse it immediately.

    Yummo! This video was so very helpful Stacey. My husband will politely eat a “mistake” but I can tell he dislikes it as much as me. But our son starts laughing and says, “ shit Mum what happened 🤣”. I’m a recipe girl but you may have just given me some confidence to learn, thank you ♥️♥️♥️

    I discovered in lock down that having a good stock of long life staples tins, herbs, spices pasta, rice even long life cream makes it much easier to come up with a meal.

    Thanks Stacey that was great. The word failure resonnated with me , as a young girl i decided to make curried chicken, the recipe was my invention, well the curry sauce would have made great wallpaper paste, my brother and best friend sat and faithfully ate it and said thank you that was lovely. I know it was anything but lovely😅😅

    I’ve never made garlic sauce so thank you. I try different things at times cooking. Learnt from three rivers to keep all stocks and pan juices for other things. To think for years I threw them down the sink or in scrap compost bins. One thing I learnt to keep flavours simple. Works best.

    When you have no other choice but to wing it…sometimes it actually doesn’t taste half bad 🥴… my mom passed unexpectedly when I was 17… I hadn’t spent much time paying attention to what she did to feed us… but in a effort to replicate some of the things we used to eat I tried my best to toss things together in hopes that the flavors would somehow be similar…. Toss and hope… and like you said, lessons were learned with each and every toss 😊 To this day even when I have a recipe I have a continuous need to tweak them 😂😂😂… there’s a great old book called the Kitchen Companion by Polly Clingerman that focuses on the basics and how to build on them…it was worth its weight in gold to me back then

    I really enjoy Stacey's creative thinking with every meal or recipe. Always mostly what one has in the pantry too. Nothing too far out of the ordinary re. condiments or spices, or that I'd have to spend weeks trying to hunt down. There are some things which are obviously seasonal, or less common, but one can substitute with a local variant.

    It's practice, experience and being able to picture how combinations taste before tasting. Much like a good musician can do the same with sounds. An artist can see what is in a blank canvas or a photographer learns to see and compose.
    Best I ever saw was a Scottish chef at a work retreat in an out of the way lovely location. He would go every morning down to the local markets and grab everything that was cheap and turn it quickly and efficiently into delicious meals for about 20 people all on his own. It was a delight to come to every meal and see what he had come up with. Never the same over the whole week.
    As with art it helps to limit your palette. Simple is best. Michelin star restaurants work at perfecting complex dishes and strictly following exactly the recipe and techniques every single time. Good Home Cooks know basics and wing it so it is never the same twice, which in my opinion makes them much more interesting and appetising. That's you Stacey. 😀
    Here's to the Nana's, Nonas and YaYas of the world with their wealth of experience and practice. My mum was a good Austrian cook but I've learnt most from a past girlfriend's Italian mum and my Chinese wife both superb cooks. I don't do their dishes, with a couple of exceptions, but they all influence and inspire what I do. I've learnt what will probably work and what to do if it doesn't go where I thought it would. A leek and potato soup I did the other day that wasn't working because the leeks did not have the intense leek flavour I wanted, turned into a casserole with a few more veg, mushrooms and poached Italian pork sausages. Went from bland to something entirely new. Wonder if I can repeat it?

    There's nothing better than freestyling in the kitchen - you do it well and it's encouraging. Sometimes I look at what combinations are used in cookbooks and make that a springboard to freestyle a new recipe🙂 Ginny

    So simple, and so delicious! Husband is an absolute ANGEL for just always being your biggest fan - he's a good man! All I cook with is stainless steel and cast iron. My stainless set is as old as yours and when I find it getting "crusty" I'll make a paste of baking soda and lemon juice and jut scrub it. Generally though to keep it clean it starts at the beginning of using it - hot pan/cold oil = food doesn't stick. The insides of the pans stay "fresh" and won't stain. Stainless also holds up well to soaking.
    Once again, another great vid Stace with A LOT of ideas and encouragement to do it ourselves. And look at you at 25K now! You are ROCKIN IT Lady! This has been such a beautiful journey watching you grow and making your dream come true. I am SO HAPPY for you! Love & BIG HUGS to you and Husband

    Your learning and failing statement is brilliant!
    What, cookbooks are instructions on how to make dishes? Mine are mainly for cuddling up with a good book. Love reading old ones with all the chit chat and how to from a hundred years ago. When the family asks what's for supper and I can only tell them the main ingredients with a shoulder shrug. Leftovers is the usual main ingredient changed into a different dish by adding whatever is on hand.

I have never been an intuitive cook and have always found it difficult to adapt recipes or swap out ingredients, which is why I love your channel so much.     This is how I learnt to cook! I found when just starting out and learning about flavour profiles, it was easier to stick to ‘cuisine’ ie. Italian, Indian and then learning what herbs & spices go well together. Once I had them down it was easier to go out on my own and mix things around 😊

    You think like a chef! Sometimes I will look at recipes online for inspiration (search for an ingredient I want to start with), then wing it with flavours I have in the pantry. By the way, the acid in the cream works to thicken it, but it won't work with any other dairy with less fat content. You would get curds and whey instead (ricotta). Don't feel self conscious about eating on camera, I love your reactions - truly genuine!

    I absolutely love ur videos, I come from a family where, mum would always make something out of nothing, boil up was her go to but in saying that, those were the best meals we had when mum would throw something together and it tasted so delicious

    Totally agree but if you know the basic's in cooking like making a Rue or a basic sauce can help everyone to add to it, whatever they have in their household, I don't have an oven so cook outside or on the Gas BBQ has helped me appreciate the love and enjoyment in my cooking with using what I have to work with.     I cook like you do. I love the challenge of making good healthy meals for as little cost as possible. Soups are another one thats good with many variations of ingredients. I have done this recipe with fake crab and shrimp that I bought on sale, and needed to use up from my freezer.

    Lunch looks great! I've been watching your videos for a while now, love seeing what you make and how easy you make it look. Thank you so much for sharing your knowledge with us. I'm in the UK, its so nice watching a kiwi and seeing snippets from home.
    I have a love hate relationship with food, love to eat it but hate to cook it. I have good intentions to try. I buy the things to make stuff but end up with a pantry full of ingredients that usually go way out of date before being thrown out. I can do the basics boiled veg, mashed potatoes and meat etc, but never use and herbs, spices or sauces, as i have no idea what to do with them.
    I had a new kitchen 2 years ago hoping it would inspire me to cook, think ive used the oven maybe 12 times 😕
    Summer is the best time in my kitchen because we get salad and cold meat, which is at least edible! 😂 Maybe one day i will be adventurous and try making something 🤔

    I am going to have to try and write the recipe down and add to the meal planner that you have shared!     :Hello new friend Stacy! I'm in New Haven Connecticut USA. Relatively new to watching you and adore you and your channel! You have inspired me so much! I started this weekend. There is just my daughter and I here but anything to make meals easier..PLEASE! I made huge pot of bolognese that I will use for every sort of anything that uses a red sauce. Daughter loves rice so made and froze 1 containers of rice with veg. Fajita meals, beef and chicken. Mac cheese with broccoli. 2 pot pies, butter chkn, Tikka Masala with naan. 2 - 9" carmelized onion Foccacia. Pizza dough. Stroganoff with green beans, Swedish meatballs with Dill mushroom sauce. Lasagna and Baked Ziti still to do. We hv a hot dog and a burger night too. Also BLTs and Tomato soup and Grilled cheese...Im not bragging Im really not I hv wanted to do this forever and only made it about 7 meals... When I sat down and really made a list of freezer meals, I enjoyed it. Made a batch of sour cream corn bread that is just so LUSH! Chkn wings to do and a crispy potato salad that is HEAVEN!!! TY TY TY my new friend with the bluest eyes! Such fun!! I hv been really sick and not left the house for couple of weeks..this is what I needed!!! LOVE U GIRL!!!!! ❤❤❤ Dawn.

    I have small crock pot that use too make a quick meal. I use a half of polish sausage ring cut it into half coins add 2 pints of home canned green beans & potatoes for around 3 hours on then turn too low and sometimes I use a pork steak or pork chop. Best for gardening season meals.

    that looked delicious. I wonder about a dusting of fresh nutmeg. Never made a garlic sauce with just cream - will try. I don't own a recipe book, just cook with my heart, practice makes progress & I started cooking independently at age 8 = 55 years ago. My hubby used to eat anything I made - all the experiments 😄he was so good & supportive. love your videos.

    Love your recipe ideas. I've started shopping at the vege store more and buying what's on special, this works with me trying to eat more veges, saving money and not waste food.

    Stacy when you were talking about learning from your mistakes, a very old lady told me when I was a new bride with little experience cooking and had had a flop in the kitchen , “if it isn’t a cake it can be a pudding “ her way of saying make the best of what you have.

    The best thing about this channel there is something in it for everyone. As an older viewer I love the tips and tricks, the recipes and the sensible instruction to make what we do every day exciting. And the days when I can't be bothered or too busy there is the freezer meal to solve that problem. Making pucks to reduce wastage, tidying the pantry by putting ingredients in glass jars, even demystifying cooking with yeast. I apply what is useful to me, be it a recipe or a better way of doing something I've been doing for 50 plus years. Thanks Stacey , an inspiration to every viewer.

    Another fantastic informative video. I am an ingredient shopper now. Then I make up what to cook from the protein as that’s where I start. I live in the country now and not in the city so shops are 45mins away. Cheers from Australia 🇦🇺

    Awesome video!!! I love how you break it all down into categories. If I can humbly make a request ... can you talk about cooking for a big family?? Beginning June dinners will go from cooking for 3 to cooking for 8, and I need ideas for streamlining prep, cooking and cleanup. No rush on this, I still haven't finished watching your playlist.

    Fantastic!! Great episode, thankyou. I've worked out a couple of dinners using pasta & my last pack of frozen pumpkin soup from last winter. Then thought blow, no cream, but I do have sour cream, that'll work. Woohoo ❤

    I love this! You are so good at teaching ❤ What I find also is to peek at recipes for clues on what goes together well, and see what I might have that is similar. Also wanted to say, I start with potatoes often, and have come up with some winning combinations lol Rice as well. You're very much appreciated, Stacey. I have never made a garlic sauce 😮 and going to try it out!
