I don't think you'd get much about their health from body language. They'd rather try to conceal illnesses. However it can be helpful to know attitudes or behaviors that can be telling on the bird's mood.

I used to go and visit a cute little owl in an old abandoned plane near to where I lived, it was so beautiful. Seeing them so closely is so nice, interesting and helpful knowing about them too. Thank you for being such a wonderful caregiver to these beautiful creatures, you do such a great job, and are so caring with all of your animals, you can tell that you truly love them and care about them. I have been fascinated with owls since I was a little boy (60+ years ago). Having grown up in an area of dozens of family dairy farms there were plenty about. Birds of prey, but especially owls, have mastered the resting bitch-face look. He is adorable! But he is huge compared to the smallest owls we have here in Norway, Spurveugle (eurasian pygmy owl, Glaucidium passerinum) They weighs about 58/60 grams, and are way to cute. When we lived in Wyoming (in the US) we had a little burrowing owl that lived in your yard, and he looked perpetually grumpy 😆 we loved him.
