It was almost over cooked. The patty is smashed so thin it almost cooks through on one side. then when it is flipped, it finishes cooking and toasts the tortilla up some too. I was skeptical at first too, till I tried it. Trust me, I'm not eating raw hamburger.

This is one of those "shut the front door" moments for me, like when he put the tortilla burgers in the taco holder, then stuck the spatula in the middle for that taco shape. A cast iron pan should work, too, right?
