Just so you know, "tacos dorados" were the only style taco known in the USA and came with those from the northern States of Sonora, Chihuahua and Coahuila, fleeing the Mexican Revolution (Pancho Villa) of 1912-1920. Jack in the Box and Titos Tacos still serves a type of Dorado here in So. Calif. Dorados are now making a come-back by street vendors. Soft tacos, from southern Mexico, where flour tortillas and grilled tacos are a rarity, started to make an appearance in the USA, 20-40 years ago when foodies discovered them on vacation in the Southern Mexico beach resorts. Helpful hint: Use grated potato to the beef as a binder instead of cheese, as you cook. Some kitchens use refried beans . Seasoning is key at this point. Both are great. Add grated cheese and crema as a topping. Also... a Quesadilla should Never, EVER contain meat. A high quality Queso, is Queen in a quesadilla. The bridesmaids are alway grilled mushrooms, zucchini, nopal, shredded cabbage, any vegetable. And... Find yourself a good cooked salsa recipe. Cholula is perfect for the lunchbox or glovebox. Buen provecho, ya'll!

He taught me to cook tortillas the same way and I taught my wife to do the same. My wife, who is from the east coast and knew nothing of Mexican cooking, decided to start making the taco filling her way, which was frying onions, add in the beef and seasoning, and then add beans, both whole or refried as a binder. add cheese and hot sauce at the end. Little did we know that her method was apparently more authentic tacos dorados? thank you for the added information!
I'm from Mexico and we prepare those ones every other week, are delicious... you can also prepare them with chicken... if you are on a lazy day can use rotisserie chicken leftovers to prepare them, some avocado, onion, and tomato, homemade salsa and tastes delicious!

I’m fairly sure that ATK used the baking soda because it helps to brown the beef quicker, which I guess could help it retain more moisture as a side benefit. The ATK host, Dan, made a video about using baking soda on beef. Great video!

Especially bacon grease for eggs. 🤤🤤🤤I have a first gen griddle with the side grease trap. Love it!!! Great video. IF you really REALLY want to go all out for the Anderson’s, replace the ground beef with thinly sliced grilled skirt steak (sliced after grilling) and use the same seasonings you used in this video. Mexican meat markets call this cut of meat “Carne (meat) Arrachera” and is what ‘Carne Asada’ is made from. ‘Asada’ meaning grilled. It’s a few cents more but worth every bite of that. ‘Carnitas’ (shredded braised pork) is great too. And ‘Chorizo’ a Mexican sausage, is used as well. Heads up: Chorizo is already seasoned. ‘Great Sunday! ✌️

Grew up with several Mexican families in our neighborhood (60 years ago!😋) and this is how the tias y abuelitas taught us to make tacos.
