I made these last night and the family loved them. I used egg roll wraps because I couldn’t find wonton. I just sliced them in 4s and layered…delicious thank you so much for the recipe.
Whenever I make gringo tacos, I use the grease from the beef and fry the tortillas and use some of it and mix with bacon grease for the refried beans. It’s a secret a lot of Latinos use for the tortillas and beans. Lard and leftover grease gives it that extra flavor in your beans you eat in your burritos from that real authentic taqueria. I’ve seen both of my abuelas from both sides of my parents family use this technique or similar. To this day if i don’t taste the refueled beans the way they should taste I don’t eat them anymore. This idea of cupcake tacos is pretty clever and I like it. Good stuff keep up the good work!
I was raised on bacon grease, but beef tallow is something we never used. I have never understood why. In the post-WWII economy, it would have made economic sense. I shall have to give it a try and see for myself -- thanks for the tip.

The steam from their warmth will make the baked goods softer. With the wonton wraps, I imagine they would be somewhat crisp after baking. CANNOT WAIT TO SEE!

Back in the 70s my dad made something similar. Instead of wontons he used biscuits from the tube, rolled it out and into the cup tray, filled with what you want, cooked meat first till biscuit is nearly done then cheese it till melted. Pizza version as well or meat, mashed potatoes and topped with stuffing, etc.

What I like about this recipe is that everything is interchangeable. I’ve a few friends who are vegetarians (but eat cheese), so I grounded up some tofu and flavored it with the taco seasonings, added fresh veggies and they came out great.

Another good topping we use in our home is we mix Mexican sour cream with la Victoria salsa. we use that as a salad dressing when we make taco salad or toppings for tacos that way you could control the heat

I made these and they were amazing! I had left over roasted cauliflower with goat cheese. I used it in the wonton wrappers and they were a huge hit!
