Sierra Buckingham You don't live near any Asian markets that sell the bottled padek? If don't have any padek, you can add a little more salt or fish sauce.
The only Asian markets we have here are Korean and philipino market, they have some fish sauce and other things I need but Paedek is so hard to find, do you know any place online I can buy it from? btw I LOVE your cooking!!!
The Filipino store should have sauce similar to padek. You can look for bagoong sauce or anchovy sauce and try that first. That would be cheaper and faster than ordering online. So, in my videos I try to explain everything that I think people might ask. So, I try to make my videos like a full class targeting beginners, instead of just presenting the recipe and instructions. I think this way, people who just want the gist of it can forward through the parts they don't need.

Sweetylaos yanang in my opinion extract is only good with other plants like bamboo and mushrooms.
