Thank you so much aunt nana for up load on youtub on how to cook these varieties and wonderful traditional of our lao food. And teach our young brothers and sisters not forgeting where we coming from. Especially these days our young people seemingly to follow too many western culture and forgot how to do our forfathers ways for doing things. Like father use to say. (a good tasty food is the heart and soul of the people who made it). Unlike most western and mexican foods they just put salts and peper onit and that it.
You did a great job making Lao recipes. A huge contribution to all of us who wish to learn, because in all honestly, I have not seen any restaurant serving these recipes...Thank you so much!
My mom has taught me how to make this recipe but she never measures, I appreciate that you take the time to suggest the measurements. Kop chai Nana; Sok dee mee hang sister!

mouth… watering… my mom usually uses catfish, too, but last time she only had salmon belly in the house and it was REVOLUTIONARY. i'm going to buy all the ingredients tomorrow and make it myself.
Thank, hope one of these days Nana will teach us how to make Lao style barbecued sticky rice with egg yoke spread on it, the one that they sell on street in Laos.
OMG. It was so much easier than I remembered making it with my mom years ago. I made it last weekend and stuck some in my freezer. Your ingredient were easy to find and my house did not smell like pa dek. It was so so so good. Can you do a tutorial on som puck (pickled greens or cabbage) now that I can make mok pa, have to have som puck with it. please please
allstar904: yes, almost all 'mok' is pretty much the same. you just change the main ingredient. If you do mok chicken, you can also add the bean thread noodles.
JokerIntegra, my 'mok gai' (steamed chicken) is the same as 'mok pa.' Just replace the fish with chicken. Also, if you have chicken innerds (egg sacks, intestines) those are good to add.
sparklyperidot: My mom made about 20 gallons of padek that has been aged for over 8 years. It is very potent! I don't think we'll be making any padek very soon. I will surely share when or if I do it.
Sabaidee euy Nana, can you please make a video on how your mom makes home made pa deak? My grandparents retired and moved to Laos recently so they cant show me how to make it :( aunts and uncles dont know how to make home made pa deak. Thank you for this recipe.

allstar904: yes, almost all 'mok' is pretty much the same. you just change the main ingredient.

They are kaffir lime leaves. It's similar to lemon leaves, but you can't use lemon leaves.. lemon leaves don't have the same aroma.
Could you make a video of how to make som pa please?
btw i am super hungry after watching ur videos
Dang I really wish there were more of the English instructions in there because I really wanna try this dish!
gright2009 the ingredients are listed in video description. You just mix, wrap, and steam.
There is also a chicken version at ruclips.net/video/dzeS_zm7fBY/видео.html
Belladona2040: I have two types of broth for Khaopoon so far -- namjeo and namgai. I'm planning to make another type later.
Hi Nana, thanks for sharing this recipe! I already tried this recipe out and it is delicious!
Love your vids!!! Do u do it different for chicken?????
Hi Nana , I never used baking soda before, you mean cut fish in pieces and soaking in baking soda or put whole fish in it?
What do you mean when mix with baking soda not understand?
looks delish. how do you make sour fish.
yes.you are real lao no doal i really enjoy wacth you.you need to speak more own lao not english. ithink it make more real.myself is Thai. i understand lao.
I love your channel!!!
Can I make this and freeze it? Should I freeze the steamed ones in leaves or freeze the stuff before i wrap them in leaves? What do you do?
I usually freeze them after they have been steamed in the leaves. And re-steam or microwave when needed.
U say "I don't want to make it salty, So u added the egg plant, followed by more pedak!😂
Mina Frial 😂 it was the rest of my padek that was already measured out.😂
Sa bai dee nana, I noticed you didn’t add any salt or fish sauce, is that the alternative if you decide not to use the padak? And if I don’t have a stackable steamer , am I able to cook the mok pa in my sticky rice steamer pot/basket?
A little different than the one I used to cook
nana,, the banana leaves gives a better taste or flavor..
How much salt to use if already use padek and fish sauce?
pen ta chep tea
Can u show us how to make porkball from scratch, please!
Hi Nana, u the best ! Can we not use banana leaves but just foil for wrapping only?
rosyred2015 it will still work without banana leaves but it will smell and taste better with banana leaves
Hopefully Lao boys too, not just Lao girls. ;)
Hi how many cup of rice did you use in this dish?
whats that leaf called? is it similar to lemon leaf?
😞👌
sabaidee nana, can you make video of " mum seen " ? thank you
What brand is the pad ek? Fermented fish sauce??
Hawaiian Orchid unusually use the Pantai brand.
This shit is off the hook cheers
bella phone 😮😍
thank you, so I soak the fish in milk for 30 minutes to get rid of the smell? do I rinse it after soaking for 30 min?
Yes, rinse the milk off after soaking. You may not even need to soak it in milk if you think the smell is OK.
mualeena this is Not American food is lao food we do not soak fish in milk god damn it. More like Salt Water 💧. If you want to get the smell out .
dsomlit: yes, cut the fish into the pieces before you soak.
Nana,
How much pounds of catfish did you have?
Does the Asia catfish in the store taste better than the American catfish ?
Jet Saysa I haven't eaten enough of the Asian catfish to be able to distinguish. However, this recipe is good with any kind of fish or other meat.
hi how many cup of sticky rice did you use?
I used 3/4 cup of uncooked sticky rice. It depends how thick you like it. you can use more or less.
How much of fish sauce u put Nana I'm making it right now :)
Pat Chan it depends how salty you like. You're probably finished by now.
Can we use any fish for this recipe?
leesummer20 Yes, any fish you like, but preferable fish that don't have lots of bones.
Padek, fish sauce and salt?.. I would think padek is salty enough..
I know sounds like it would be extra salty, but the they balance out with the fish and other ingredients.
