    Mok Kai / Steamed Chicken / โมกไก่
    Ingredients
    ~Fresh chili 4 green / 4 red & 4 dried chilies or as needed
    ~5 cloves of garlic
    ~6 cloves of shallots
    ~4 slices galangal
    ~10 Kaffir lime leaves
    ~1 stalk of lemongrass
    1/4 cup. of soaked sticky rice
    2 tbsp. of Padek sauce
    1 tbsp. of Padek paste
    2 tbsp. of fish sauce
    1 tbsp. of chicken bouillon
    1/2 tsp. of salt
    2 Eggs
    1 Banana blossom slices thin ~ 2 cups
    One lime cut in half squeeze the juice in water to prevent from blackening
    a handful rice paddy herbs chopped
    a handful of spring onion chopped
    a handful of baby dill chopped
    Instruction:
    Smash all the spices together as shown in the video
    Add all seasonings and herbs into the boneless chicken mix well
    Wrap in banana leaves, as shown in the video.
    Optional: you can use Aluminum foil to wrap the chicken is OK as well.
    Steam the chicken for approx. 45 minutes then open a package
    to see if it cooked OK, turn off the heat, and be ready to serve.
