    Oxtail Stew Recipe with Fragrant Aromatics and Rich Seasonings
    Ingredients:
    4 lbs. Oxtail
    Vegetables:
    1 cup chopped Tomatoes
    1 cup chopped Bell Peppers
    1 cup chopped White Onion
    1 stalk Spring Onion
    1 stalk Lemongrass
    3 to 4 Kaffir Lime Leaves
    Few slices of Galangal
    Fresh Chili (as preferred)
    Seasonings:
    1 tbsp Chicken Powder
    1 tsp Sugar
    1/4 tsp Sea Salt
    1/2 tsp Black Pepper
    1 tsp Garlic Powder
    2 tbsp Fish Sauce
    1 tsp Onion Powder
    1 tbsp Turmeric Powder
    4 tbsp Oyster Sauce
    2 tbsp Seasoning Sauce
    3 tbsp Vegetable Oil
    2 tbsp Fish Sauce
    Instructions to Prepare Oxtail:
    Clean and rinse the oxtail thoroughly.
    In a large pot, boil the oxtail until partially cooked. Discard the water and set aside the parboiled oxtail.
    Saute Fragrant Aromatics:
    Heat vegetable oil in the pot.
    Add chopped onions, bell peppers, and tomatoes. Saute until the vegetables are tender and aromatic.
    Enhance Aromatics:
    Add lemongrass, kaffir lime leaves, galangal, and fresh chili. Stir to release their fragrances.
    Season the Base:
    Sprinkle chicken powder, sugar, sea salt, black pepper, garlic powder, and onion powder. Stir well to coat the vegetables evenly.
    Infuse Flavor with Sauces:
    Pour in fish sauce, oyster sauce, and seasoning sauce. Mix thoroughly, allowing the ingredients to meld and enhance the flavor.
    Add Turmeric Powder:
    Incorporate turmeric powder for a vibrant color and earthy taste. Stir until the mixture is well-coated.
    Introduce Oxtail:
    Return the parboiled oxtail to the pot. Stir and ensure the oxtail is evenly coated with the aromatic and seasoned mixture.
    Simmer to Perfection:
    Add enough water to cover the oxtail. Bring the stew to a boil, then reduce the heat to low. Cover and simmer until the oxtail is tender and succulent.
    Adjust Seasonings:
    Taste the stew and adjust the seasonings as needed. Add more salt, pepper, or fish sauce to achieve the desired balance of flavors.
