    Thank you Nana, I will try your version as it is really cheap and good to make it at home. For those who are new in cooking as Nana has to talk and show you how, you have to always turn the bottom up and bottom up so that the chilli or peanuts that you're frying will not burnt. I was hunting for 老妈子辣椒油, I think this is almost like that. I often add it to my crushed cucumber.

      Dimi K lol the salt is supposed to keep the chilies from popping. That’s how my mom always taught me. I can’t remember if I’ve ever tried without salt

      Jon Woodard it’s good to add to pho and other soups if you like spicy. Try making a small batch.

      You can buy these chilli peppers from an Indian grocery shop. I have even seen them in my local supermarket

      Zara bees this is condiment usually used in soups like "Khao piek" and pho. And anything to want to give a kick

      Constance Phyllis I only use oil when roasting the chili, but not added in the oil.

      My first batch was nice and spicy. The second batch wasn’t really spicy at all . Or maybe I added too much garlic?

      Daniechan Rapati if the chili pepper is not spicy, cooking it longer will not make it spicier. if you add more garlic or more oil yes, that could make it less spicy. But the spice level depends more on the chili peppers.

      Gessica Di Rosa I store it in cool dry place. I don’t put it in the refrigerator. I clean the jar really well before adding the chili oil. I sometimes leave the jar open for many days without any problems.

    Hi Nana, What is the difference using dried chilli and fresh chilli? I don't have any dried chilli here I think I have to dry them in the sun?

      You have to dry out the chili. The moisture in fresh chili will cause you trouble when you add it to the hot oil.
