    You can use any cooking oil. I used grape seed oil last time and it was amazing.

    DON'T use Olive oil viewers. Use a high temperature oil such as Peanut, Canola or vegetable. She mis-read the autocue.

      Right, wanted to point that out too :) Canola works good for me and its super cheap here, the peanut oil altough fits a bit better in terms of taste I think :)

      Olive oil does not the original oil in China. So it's not Sichuan chilli sauce.

    If you want to use olive oil, make sure to use oil from the last pressing (usually the cheapest). Never use extra virgin olive oil, as it'll most likely burn on you and turn bitter.
    But better yet, use an oil with a high smoke point, such as peanut, sunflower, canola or something like that.
    Also, if you enjoy the taste of sichuan peppers, you can cook a tablespoon or so with the oil. Make sure to take them out after the oil begins to smoke, or you'll burn them.

    You need oil that can handle heat. Olive oil is not appropriate for chili oil.

      You can use REGULAR PURE olive oil as long as IT'S NOT extra virgin. In the video she uses REGULAR olive oil which is fine for this application.

      Cayenne powder is from a single red cayenne chili ....chili powder is usually a blend of chili peppers

    it is the very first time I see chili oil being made this way.....normally, chefs would fry the minced dried chili on low heat until the chili is golden brown... anyways, thanks for sharing

    I watch couple of videos like this and I never understand why people tell you to wait until oil starts smoking. The smoking point of different oil is different and perfect temperature for pouring the oil on top of chilli is the same. Oil to hot = burned chilli. I'm not a chef, but isn't that obvious mistake?

    Why not use peanut oil and skip the peanuts? Not a lot of olive oil used in Chongqing, most cook with peanut oil.

    I would never use Olive Oil, that's a waste of good oil. Use Canola or Peanut oil. Put pepper flakes, ginger, and garlic in oil and put it over low heat for 20 minutes and let it steep on that low heat. After 20 minutes or so take it off the heat and add some Sesame oil to it. Put everything in a container then let it sit for 24 hours before use. Strain into another container and refrigerate and enjoy.

    Its mostly a sauce, you dont really cook with it. It goes good on just about everything though. Rice, Chicken, Noodles, Pizza, any asian food. It's great
