This is my go to recipe. I add a little bit of lime juice, allspice, and sukrin gold brown sugar substitute to marinade. I also put all ingredients in a processor to make more of a paste to rub over the chicken.

Finally getting my jerk chicken dialed in after watching this. I previously made the whole thing from scratch, then used straight Walkerswood; neither were what I remembered. I wound up making the marinade with Walkerswood, one scotch bonnet, soy sauce for umami, green onion, dry thyme (forgot to get fresh at the store), 3 cloves garlic, ginger, orange juice for sweetness, and key lime juice for some acidity I thought was missing in Walkerswood. Marinated 8 thighs overnight, smoked on a charcoal kamado with apple wood and a handful of soaked bay leaves + allspice berries at 350F, finished with a glaze of Walkerswood + key lime juice. I think it could be improved by backing off the scotch bonnet a bit to not overpower the allspice and thyme flavors and slashing the chicken more aggressively up front but I'm happy with how it came out and a little surprised the chicken didn't just disintegrate in a citrus marinade overnight. I will have to try this recipe out! I have my chicken marinating right now and didn't see this until it was too late. It's getting ready for the grill and my pimentos and bay leaves are soaking. Should I also add some applewood chips? What is the best way to create some smoke with a gas grill... Perhaps using some tin foil in some way?? The last time I was at an Asian grocery store, I picked up a jar of Jamaican Pimento seasoning made by Carib. I am not really sure how to use this or what it is for. Aside from having some awesome Jerk Chicken in Jamaica, I haven't ever prepared it or found a restaurant that does. I prepared a rub from scratch and a sauce/marinade after finding what I thought was close to being authentic and what I ate in Jamaica. The marinade tastes so wonderful by itself.. can't wait to try it out on a piece of the chicken. I need to purchase some more Jamaican whole pimentos as I used all of them. For quick smoke on a gas grill, wrap some wood chips in foil and place on the burner. wood pellets also give great smoke. As for a jerk finishing sauce, I sometimes use Walkerswood with a squirt of fresh lime. thanks

I use a foil tray with a raised rack for easy clean-up. when I cook indirect. I have the outside burners turned on with no heat directly below the tray. the tray helps deflect the heat too. Thanks

Montréal Jerk was the best ready to use Jerk on the market for me ( need few other spice tho ) but Steven Raichlen recipe in Barbecue Sauces and Marinade book still my favorite if made one count ! Walker wood hot in paste is pretty good too and it was not expensive but i still like my home made habanero hot sauce bether to spice it more then i adjust with few other spice . Realy taste if someone never try it before he should put that on his to do list !
@@MinniNatty Pimento can be tough to find and expensive if you do get it. Any type of wood smoke is better than gas or oven. If you want a more neutral smoke just use charcoal and cook low and slow.

I like how you add white vinegar -- very over looked ingredient IMO. I also like your finishing touches with the salt and look forward to trying it. However, it can't be habanero or scotch bonnet. It has to be scotch bonnet. My jerk is scotch bonnet-centric, and if it is missing, it just does not hit right at all. But hey, that's just my opinion.

As I explained in the video, we used Walkerswood Jerk. It is the best commercial jerk out there. It paid off as we won $2000 1st place three years in a row. Most people don’t want to hunt down ingredients especially in a pandemic. I smoke with applewood. I tried for years to get pimento, can’t do it.

If you didn’t use pimento wood to smoke the chicken the judges opinion becomes irrelevant because you haven’t followed the authentic recipe. And using jerk sauce from a jar instead of making your own sauce is insane.

The channel is called "Keto Lifestyle". The jerk seasoning contains sugar. That does not compute. Read the ingredients on the bottle and make your seasoning. All seasonings are listed in the order of amount. Experiment and you'll find the mixture you like. Make it without sugar or use a healthy sugar substitute. 😎
I have all kinds of smokers but the majority only have access to a gas grill or oven. I talked about smoking options and got some good smoke on it. It got the job done.

Can you smoke jerk with oak wood? Great recipe will be defo fireing up the drum for this one!

No, Authentic Jerk smoky flavor comes from pimento wood. if you use a different wood its tastes good but it will not be jerk chicken

If you didn’t use pimento wood to smoke the chicken the judges opinion becomes irrelevant because you haven’t followed the authentic recipe. And using jerk sauce from a jar instead of making your own sauce is insane.

All seasonings are listed in the order of amount. Experiment and you'll find the mixture you like. Make it without sugar or use a healthy sugar substitute. 😎
