This is brilliant! I sometimes make vegan cupcakes for someone but the recipe includes soy yogurt which I can't stand so the rest of the pot always ends up in the bin. No more waste.. 👍x

My cakes always turn out lovely but I just wish I could get hold of a small, single pot of the stuff because I never need to use much and the rest gets thrown away because no one likes it. If I can have a recipe without then it's great because I hate wasting anything..
Shake left over well and freeze in ice trays. You can then store the cubes in a ziplock bag. Defrost what you need when ready. May look a little grainy/curdly when defrosted, but blending brings it back to normal consistency. Since you're going to add vinegar to it, then the grainy texture wont be a problem.
*As you were putting out the ingredients I thought I hope I have everything 🤞🏽I don’t have oil but I’ll substitute it with some margarine and see what happens. I only have apple cider vinegar so I’ll see how that works too😆*
I agree! I'm in the UK and there's UK cups, US cups then one conversion is different from the one written in my book 😫 then the conversion chopping board I specifically bought for this reason is different to both. Seriously, the trials and tribulations of baking! And people thinks it's simple 🙄🤣🤣🤣

Soy milk mixed with vinegar till it curdles works well. Some yogurt had cornstarch added to then.
