I just made these and I am very happy. I had to use a little lemon juice in my almond milk bcz I didn’t have anything else. I think next time I may try half oil and half vegan butter to see if it could be a more rich cake flavor. But the cake was moist, soft and flavorful. They rose very well. Thank you for a great and easy recipe. I am not vegan but if I didn’t know these were vegan, I would still say they are delicious.

For those that are gluten-free and only eat organic foods, such as myself, Namaste Organic 1:1 GF Flour Blend is an alternative to King Arthur's Measure for Measure that is presumably glyphosate-contaminated as are both GMO and Non-GMO crops in the U. S.

I made these and something went so wrong! I used coconut sugar, and swapped half of the flour for whole wheat flour. They came out gummy and super sweet. I measured with a scale and followed all other instructions. Super disappointing because i love experimenting with new vegan recipes. Perhaps I’ll try again without any substitutions.
coconut sugar has molasses I think from my knowledge, I could be wrong 😅 I’ve never played with wheat flour, but I’m guessing wheat flour is more absorbent and so it might alter the texture
