- This classic, easy vanilla cupcake recipe is soft and moist with a distinct vanilla flavor. No complicated ingredients and less than an hour from start to finish!

Ingredients
Cupcakes
6 Tablespoons unsalted butter softened (85g)
¾ cup sugar (150g)
¼ cup light brown sugar (50g)
1 large egg room temperature preferred
1 ½ teaspoons vanilla extract
1 ⅓ cup all-purpose flour (167g)
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
¾ cup buttermilk room temperature preferred (175ml)
Vanilla Bean Frosting¹
1 cup unsalted butter, softened (226g)
¼ teaspoon table salt
3 cups powdered sugar (375g)
1 Tablespoon vanilla bean paste
1-2 Tablespoons heavy cream (as needed)

Instructions
00:00 Introduction
00:12 Preheat oven to 350F (175C) and line a 12-count muffin tin with paper liners. Set aside.
00:17 Combine butter and sugars in the bowl of a stand mixer (or in a large bowl--and use an electric hand mixer) and beat on medium speed until well combined and light and fluffy.
02:03 Add egg and vanilla extract and beat well.
02:45 In a separate, medium-sized bowl, whisk together flour, baking soda, baking powder, and salt.
03:40 Remove butter/sugar mixture from stand mixer and use a spatula to gradually fold in about ¼ of the flour mixture until just combined.
04:25 Add about ¼ cup of the buttermilk and use spatula to fold in until just combined.
04:32 Continue to alternate until flour mixture and buttermilk are completely combined--mix thoroughly but be sure not to over-mix or your cupcakes could end up dense and dry.
05:47 Fill cupcake liners ⅔-¾ of the way full with batter (do not over-fill, if you have any leftover batter discard it) and bake on 350F (175C) for 17-18 minutes or until tops spring back when gently touched (the tops will be fairly flat, these do not puff up in the oven like muffins) and a toothpick inserted in the center comes out with a few moist crumbs or clean.
06:42 Allow cupcakes to cool in pans or 5 minutes before carefully removing to cooling rack to cool completely before frosting.
Vanilla Bean Frosting
07:07 Beat butter with an electric mixer until creamy. Sprinkle salt over butter and stir again to combine.
07:48 Gradually, about ½ cup at a time, add powdered sugar, waiting until each cup is completely mixed before adding more.
08:37 Stir in vanilla bean paste.
09:10 With mixer on medium-low speed, add the heavy cream, one tablespoon at a time until you have a smooth consistency. Once ingredients are well incorporated, gradually increase speed to high and beat for about 30 seconds.
09:46 Pipe or spread frosting over cooled cupcakes. Top with sprinkles, if desired. This frosting will be fine at room temperature for 2 days or refrigerated in an airtight container for about a week.

While I suppose it's possible to be very minor variations between brands I have never really found one or found it to be an issue. :)

Your buttermilk hack is different than the one I was taught. For example, I made your blueberry muffins and it was delicious. You put 1 very full Tbsp of fresh lemon juice in your measuring cup FIRST and then top it off with your milk to the 1 C line. It even works with soy milk and works great in pancakes too.

You could if you'd like, but I find if they are stored in an air tight container at room temperature, then there is no need for a simple syrup. :)

I commend Sam's recognition that anything less than a 2-to-1 frosting-to-cupcake height ratio is unacceptable. If the frosting's not twice as tall as the cupcake, you're eating one of those sawdusty diet bran muffins you find in those stores that sell herbal remedies and soup mix that comes in a sleeve.

I'm hoping that at some point you can talk about how using butter flavored shortening works in baking. I'm always tempted to use it but I've been trained to believe that it's bad to consumer.
I personally avoid shortening as much as I can because I'm not a fan of the ingredients. I'm definitely not perfect about it, but when I can avoid it I do.
As far as how it works, you should be able to do a straight substitute for butter in most instances.

Any shortening is a hydrogenated fat which is horrible for you! Use butter and if you need a solid fat , use lard or for some applications coconut oil will work

For the frosting, can vanilla extract be used instead of vanilla bean or vanilla bean paste? I am having trouble finding the latter.
You can just use a teaspoon of vanilla extract instead. :)

I was thinking of purchasing the electric mixer behind you. Why is the hand one better than the electric mixer that does it for you? Is the electric stand mixer overrated?

I actually love my stand mixer and it gets used very often, just not on video. I wouldn't say it's overrated, it can save a lot of time and effort. However I would say I personally think the quality of KitchenAid has gone downhill and they unfortunately aren't made like they used to be, which has been so disappointing to discover.
I prefer to use the hand mixer on camera because it's easier for anyone watching to see how the ingredients should look in the bowl (how the batter/dough looks) and because not everyone has a stand mixer and I don't want the recipes to seem unapproachable.
@@SugarSpunRun Agreed. My husband was going to buy me a stand mixer for Christmas 5 years ago, and I told him I've changed my mind, don't want one. The reviews were awful, lots of complaints of the motor and the non stick coating coming off the attachments in the batter, I avoid non stick pans, very bad for you. So I tried looking for a stand mixer that didn't have that coating on the attachments, they all have it now, I even looked at that brand made in Italy, non stick. 😖 I mainly wanted it for making bread, I don't buy bread from the store because of the ingredients, a paragraph long, and unhealthy. I make homemade bread twice a week for lunch sandwiches for my small family. My brother uses his stand mixer for his pizza dough and it comes out tough, overworked dough. I make my sandwich bread and pizza dough by hand, and the texture is wonderful. It is a lot of work, time, and tiring, but worth it. I love your slow sad stand mixer moment, hilarious! 😁
