What is Crème fraîche?
Crème fraîche (French for "fresh cream") is the European counterpart to the U.S. sour cream product. It is a heavy cream slightly soured with bacterial culture, but not as sour or as thick as sour cream.
Crème fraîche can be made at home by adding a small amount of cultured buttermilk or sour cream to normal heavy cream, and allowing to stand for several hours at room temperature until the bacterial cultures act on the cream.

I tried this for breakfast this morning. I was thinking this would be an interesting variation on doing scrambled eggs, but I had no idea they were going to turn out as good as they did! They were just wonderful. I'll certainly continue to cook them this way.

Parsley I've used before. Glad to hear everyone is digging the chives! I love that they showed him actually folding in the chives. Whenever you see those chopping closeups, it looks like soooo much. But he really didnt add a lot. Just a 'nice' amount!
I love this reciepe for scrambled eggs. It's fantastic. It took a few times to get it the way he has it, but there is no going back to American style scrambled eggs after you've add this.

Didn't have creme fraiche, but still made my eggs this morning following the rest of the recipe... Butter with the eggs, salt late into the cooking, and on and off the heat... Eggs came out amazingly!

Just made this with four eggs, some salt, pinch of garlic powder, and some cream cheese added at the end. Came out perfect !!

i've been making eggs so wrong... i just tried it this way, exactly like he did, except i used cream cheese at the end and i didn't have any chives, but this turned out better then i expected, its amazing, salt and pepper at the end, and butter in the beginning, genius

im a male uni student that hardly goes into the kitchen, but I just tried this and it only took me 5 minutes, literally, and it is perfect!
The coolest thing is, you can come up with variations of the recipe if you replace the sour creme with any number of creamy cheeses. The most important thing is to keep the eggs moving on and off the heat. The texture, and taste, is just amazing.
I used Philadelphia cream cheese instead of Crème fraîche too, and it was amazing! Definitely the best eggs I have ever had.

Just actually tried this for the 1st time today and holy S%$t what a difference in taste and texture. I always made my eggs in a flat pan and they always were semi cooked and over cooked. These however were just amazing. You really have to work the egg as to not over cook and they will turn out amazing. I will forever make eggs like this now. Thanks Mr. Ramsay.
