My favorite vegetarian sandwich is philadelphia mixed with green pesto and whole dried tomatoes in oil. Soooo savoury and yummy! I am not vegetarian sadly but love trying alternatives and try to become more plant based over time ☺️

It's so hot here in Santa Rosa! I've been looking for easy meals with no heat and these smorrebrod really hit the spot. I liked the mushroom cerviche on best. I added some hearts of palm as well, to stretch the recipe. From one foodie to another, have you tried Bibim Guksu? Cold korean spicy noodles. Easy to make vegan, gluten free. Add a 15 ounce can of diced tomatoes to a large bowl. Add 4 tablespoons each vegan gochujang and rice vinegar (unseasoned or seasoned will both work), 2 tablespoons each: low sodium tamari, honey or agave syrup, brown sugar, toasted sesame oil. Use an immersion blender to puree this all smooth. Refrigerate till needed. Meanwhile cook 100 buckwheat soba noodles and drain with cold water. Chill till needed. Assemble bowl: to a serving of chilled noodles, ladle over some spicy tomato broth. Garnish with chilled batons of cucumber, and daikon radish, chopped kimchi, asian pear (not necessary), chilled cubed silken tofu, purple cabbage, sprouts (whatever!). Garnish with sesame seeds and nori. Makes 2-4 servings depending on your appetite. Its sooo good when its hot (especially when I remember to cook the noodles in the morning and chill for dinner). I'm not Indian but I know they put potatoes on bread and rice in many recipes. Ive sean several Italian recipes as well that have potatoes on bread. I'm mexican and potatoes are eaten with rice and/or tortillas as an everyday sort of thing. There are also several eat Asian recipes I've seen that pair potatoes on rice wich is a similar concept. I think it's done pretty much everywhere.

My grandfather was from the Danish island of Romo. Other than herring👎 or eel 👎he made wonderful sandwiches on the thinnest of dark pumpernickel.
