- I'm so glad you are here to get some great dinner inspiration for you and your family! I do these videos weekly, so if that sounds good to you would you go ahead and click the "subscribe" button? This week I really took a look in my pantry and freezer and based my meal plan around what we already had. I spent less than $15 at the grocery store to get the remainder of the ingredients. I feel like the ingredients I used this week most of you already have, so you should be able to create these recipes with no problem!! I hope you enjoy!

Steven's facial expressions when he takes the first two bites of any dish make me think of my brother whenever he saw a classic vehicle. He loved Pontiacs, in particular, and the production years of 1950 through around 1965 would make him tear up, he was so overjoyed with their looks. That's what I think of when Steven takes that first bite or two, that sheer joy and pleasure they each experience(d) in their respective 'likes'.
(Brother is still alive, but is in the deepest depths of Parkinson's, so can no longer get to auto shows, let alone comprehend what he would be looking at).
Oh my gosh Gracie is so sweet with the cheese ... she's like "thank you Momma" 😊

I bought that cheese shredder because of your recommendation. My 5 and 6 year old grandsons love it! Every time they're here, they ask if they can shred cheese. 😂

@@gigifawcett5003 well, tile, so then we use our smooth cheap kitchen table- the suction just doesn’t suction the way it should. I love it otherwise.

My girlfriend found this recipe in a Borden Foods magazine 40 years ago. Cooks have made subtle changes over the years but it is basically the same recipe. She couldn't believe cooks are still making this recipe (she doesn't watch youtube). I'm 67 with an empty nest and haven't made this in recipe in many years. I am so glad it is still around. It was a family and friend favorite.
The white chicken enchiladas are still my families favorite. Thank you as always for allowing us to have new meals every day. ❤

All meals looked delicious, and will try them, thanks. Although, enchiladas are always made with corn tortillas, but I do see more people using flour tortillas, and call them, enchiladas. What you made were smothered burritos, yummy. Happy to see you made homemade enchilada sauce.
I’m from Texas and we use corn tortillas for enchiladas too. I couldn’t believe my eyes the first time I saw a friend from Utah using flour tortillas. Totally shocked. 😳

I made the enchiladas tonight, and knowing how picky my husband is, I wasn't sure he would like them. He really liked them, Said "Don't change a thing"; These are really good". And asked if there was anymore. Thank you to your friend! For a good and easy recipe.
I’ve made enchiladas similar to these but in making the sauce instead of the canned chilis I use a can of Rotel tomatoes with green chilies. I could eat the sauce with a spoon! Loved her recipe though! I use so many of your recipes as well!
I just got my Auntie Nono's yesterday! Can't wait to try it. Also, that first meal looks so tasty, but I can't do hot. I used to eat all the spicy stuff, but after having my kids, I can't handle it. Ketchup can be too spicy sometimes. 😭 I'd give up spicy again and again for the kiddos, though!

One thing I always love about you is that (other than regional differences) you always cook with ingredients that I recognize and can easily get at my Walmart. We do use Best Foods all the way out here in the West (and we forgive you the Dukes - j/k of course) but I love that I can always recognize what you're putting in the food. I've made many of your recipes. Thank you!
They All look so delicious. We love some spicy food here. My pup is like Gracie, every time he hears the cheese wrapper he comes running and sits down because he knows if he sits he gets a treat. lol. He loves cheese. lol

Instead of the tortillas I put my chicken and cheese mixture in steamed cabbage leaves and put the sauce over them and baked it the suggested time. It was wonderful. I shared with severAl people and everyone of them liked it better with the cabbage leaves than the floured tortillas they tried a few days earlier.
These are all keepers! Yay!
Mandy :: your one-pot turkey skillet is pretty much the mixture that I use for stuffed peppers. It's just me and my husband now (empty nesters) so this time of year when local peppers are plentiful I make a ton of stuffed peppers and deliver them to my dad, family and friends. It's become a tradition that they all look forward to. This week's subbie supper has been a fave or ours forever and is on regular rotation. Thanks for another great episode!!

Everything looked so delicious! I make a similar white sauce for my chicken enchiladas and add chili powder, smoked paprika, and cumin. So yummy!

I definitely love the chicken enchiladas with the white sauce, but living in California I've been told by many of my Mexican friends, it isn't an enchilada unless its in a corn tortilla, though I'd eat either. The flour tortilla reminds me of the old "enchirito's" they sold at Taco bell, a combination of a enchilada and a burrito. Thanks for sharing your recipes with us, they always get my mind rolling in the direction of trying new items on our menu.

I make a similar recipe using my homemade chili and it is a a"no leftover"" meal! Thanks for your videos and seeing Stephen and Cole's reactions. Really makes the effort worth it.
I bet that second recipe would be fantastic as a pie or in crossoints. I would par bake the bottom crust, add that completed dish as the yummy filling, top with a little cheese then add a top crust and brown in the oven, oh my! It looks great though however it is served, my kind of meal! I'm not a Buffalo person so I would probably use some tomato soup with the first one, it looks yummy. The last meal looks super yummy as well. That would be amazing served with either spanish rice or green chili rice. 😋
