- This week was a first! It was the first time a Subbie made their meal FOR me! :) My friend Chrissie has stopped by for dinner in a What's for Dinner before, but she had never cooked for us! We were honored to have her take over the kitchen for an evening and her food was delicious! We also had two other great meals this week! I hope you enjoy!

CORNBREAD: Preheat oven to 425 degrees F.
2.5 cups self-rising cornmeal
2 eggs
1/2 (half) cup Crisco shortening
2 tbsp Crisco (to grease skillet)
2 cups whole buttermilk
Heavily coat skillet with 2 tbsp of Crisco and set aside. In a large mixing bowl, mix together: cornmeal, eggs and 1/2 cup Crisco; using a pastry cutter in a downward circular motion, until mixture resembles coarse crumbs. Add buttermilk, mix with fork until well blended. Pour into the greased skillet. Place on bottom rack of the oven. Bake for 25-35 minutes or until bread is golden brown and the sides have pulled away from the pan. Remove from oven. Shimmy pan to make sure the bread is loose. While hot, flip bread onto plate. Slice and serve!
SUBBIE SUPPER by Chrissie!!
CHICKEN A LA CHRISSIE:
chicken wings (could use drumsticks or thighs, too)
red potatoes, cubed
green bell pepper, cubed
small yellow onion, chopped
1/4 cup water (maybe a little less)
2 tbsp - divided, Goya Adobo seasoning
2 tsp - divided, Badia complete seasoning
3 packs Sazon Goya Unique seasoning (2 yellow, 1 white)
fresh cilantro, chopped
1-2 jars Sofrito Goya (2 for large amount of chicken)
Preheat oven to 400 F. Toss all potatoes, pepper and onion with 1 tbsp Adobo, 1 tsp Badia complete, 1/2 pack white sazon, 1/2 pack yellow sazon. Set aside. Poke holes in chicken and add remainder of Adobo, Badia and yellow sazon. Toss chicken until coated. Add water to bottom of baking dish. Spread chicken in pan and add veggies. Nestle veggies in between the chicken as much as possible. Cover with aluminum foil and bake at 400 for 20 minutes. Remove, flip chicken, recover and bake for another 20 minutes. (She increased our oven to 425 because she felt like it needed to be a bit hotter. Ovens vary.) After 20 minutes, remove foil and add Sofrito and mix in. Top with cilantro. Return to oven for 5-10 minutes under the broiler to thicken sauce (keep an eye on it). Serve over rice.

For me, if I leave “skin” on chicken it has to be crunchy. The same seasonings were used for the veg. and chicken so I would roast my veggies on a separate sheet and my chicken alone. Once they were both roasted...mix together for the last step. No soggy chewy skin!

Adobo and sazon are staples in my house. My husbands family is puerto Rican and that stuff goes on everything! The sofrito is such an awesome base for red rice and beans
I am going to add this Sofrito to Mandy's Red Beans and Rice recipe!
@@cathynations7169 what youre going to want ro do after you toast up your rice and add the water is add half a jar of sofrito to thr pot and 2 packs of the yellow lable sazon. Also we use pigeon peas from goya. Toss those in with your rice while its cooking. Bagged or canned it dont matter. My husbands aunt also tosses in spanish olives when its done. So good

When you freeze pesto, it’ll stay even fresher if you take a piece of cling wrap and push it down to cover the top of your pesto before putting the top of your container on.
If you use a container instead of the ice cubes, which is a fantastic idea!

I use almonds in my pesto. Pine nuts have a metallic taste to me.
Also, don't let your basil go to waste if you aren't going to make more pesto before the summer is up. Pick, wash and dry your basil leaves. Put them in a Mason jar or zip bag, cover them with olive oil and freeze them. When you're making a soup or pasta just scoop out (from the jar) or break off (from the zip bag) some of the basil/oil and add it to your dish.

Yay, ive been backwards binge watching your vids & finally see Adobo, Sazon, & Badia. I use Adobo in everything i cook except sweets. My daughter & I even use it in the dough i make to fish with & the fish go CRAZY for it! They take our bait over anybody elses to the point where other fisherman get mad😆 I tell them the secret & it changes their life.

Mandy~when I've had a bumper crop of basil I have chopped basil in the food processor and spread it evenly on parchment lined baking sheets and let it air dry then put it in Mason jars. It is so good and so much better than store bought dried basil. It's so great to have on hand when fresh is unavailable. I love your content and enjoy watching you cook 🌻
I made the red beans and rice dish and added some additional seasoning...it was sooooo good.

We still have pesto from last years crop of basil. I usually have so much basil that I harvest and give it away to people I work with. The chicken pesto recipe you did has helped deplete my supply in preparation for making pesto this year.

My godfather is Puerto Rican and I grew up eating Puerto Rican rice, empanadas, homemade flour tortillas..sazon and adobo is a staple in our house..for my birthday Thursday my mom made me Puerto Rican rice and pork tacos.. everything looked yummy

Made chicken ala Chrissie tonight for dinner!! We used chicken thighs it was AMAZING… we loved it! My husband suggested adding smoked sausage next time and making it a stew he also suggested using bone in pork chops!!! That was chicken ala deliciousness!

Going to try Chrissy’s recipe and your red bean and rice recipe for sure! The ice cube trick works for lemon juice, lime juice and tomato paste. Then I just use them as tablespoons in my recipes

I made chrissys chicken tonight! Honestly new seasonings I’ve never used so I had no idea what to expect! This is sooo good!! I had to visit two stores to get all the ingredients but worth it!! I couldn’t find the white Goya so I used yellow and Orange. I used chicken breast cut into strips and I didn’t add water to the pan. It created its own delicious sauce. Yum!!
Love your channel!..We are from Puerto Rico living in Florida. And we cook every day with green Sofrito. That's color because a lot of cilantro with onion, garlic sweet pepper and cubanelle peppers. Adobo and Sazon Goya are the secrets ingredients to the red color. 100% Boricua style.

I made the creamy pesto pasta last night! I added italian sausage and baby spinach minus the steams, lol. I use 16oz box of linguine, and the add ins, so I doubled the sauce. It was great. Thanks for sharing 😃
