I have been chasing a particular peanut sauce that I first had in Sydney Australia (1970’s) at a street stall, (huge queue), then later in NZ at one restaurant. This is likely to be it as the first version was burn your mouth hot (the Massaman Curry), and you seem to have all of the different spices (tamarind plus palm sugar). So I will give this a go and tell you if it is THE one.
Wish you show how to make a normal size one like a 16 ounce jar. I have an idea because of the ingredients. A video or what normal people could use would of been spot on. Thanks for sharing :o)

Do you buy your peanut already ground? The peanut I see in Asian stores are normally redskin type, so if you buy them whole do you roast skin on and grind or do you remove the skins, if so is that by soaking in hot water first? Many thanks, Dave
No, I do not buy already ground peanut, it give up the rancid taste and aftertaste. Most Asian store have the one without redskin. Many stores have the roasted one without salt. Costco also has the roasted one without salt. If you used the redskin one, you do not soak them. Just roasted and removed skin when they are cooled down. Follow the video and stick with sequential of the tastes. You will be in good hand. Have fun cooking. Chef Phant
Sate (indonesian for satay) combined with peanut sauce is INDONESIAN NOT THAI. Anything else is grilled meat on skewer as any culture has its own version. We don't cook pad thai and call it pad indo.

No. It is not call for. You use massaman curry.
