Almost there. It needs sesame oil and fresh grated or minced ginger. You can also use chicken/vegi broth instead of plain water. I also add coconut milk, but that's not necessary. Yum! If the mix is to thin, don't add more peanut butter, instead add a small thickener of your choice. Too much peanut butter makes it taste like your eating a spoonful of it. I've made that mistake and people thought it tasted JUST and ONLY like peanut butter. It was too much, even though I had other wonderful ingredients in it. Any vinegar tastes good in this as well, apple cider, rice, white vinegar and of course red wine vinegar. I used to work in a pizzeria and we made a thai pizza and one piece of advice, is to add extra sauce. It doesn't act like a red sauce when baking. It dries up and or get absorbed by the dough. Then you don't get that creamy taste of the sauce. More like hints of peanut sauce.
Chief chef I've been using peanut butter in my chili for years you should try it. Excellent thickening agent, and it gives it another dimension of flavor that most other Chili's just don't have. Been looking for a good Thai peanut butter recipe it's excellent on chicken wings excetera.😋
That sounds cool. I'm gonna try that. And I'll make sure I don't serve it to anybody with peanut allergies. My favorite is a Mexican molé chilli where you use dark organic chocolate, coffee and some nutmeg. That really takes it over the top too.

John Reeves couldn’t agree more. Def ginger, and use a slurry to thicken.
I'm waiting to hear Flo yell out "Kiss my grits!"

You could do all of that in a Vitamix blender, including making your own peanut butter.
