    I poach cod quite a lot, too, and you're right, the flavor is delicate and true. The fish just breaks apart in soft layers, I love it. Salt, pepper, a squeeze of lemon; you need nothing else.

    I can never forget the fresh texture and flavor of a cod that I had when my family visited a port city in Korea. Unbelievable texture and juice from a fresh fish and my mom's cooking skill! Still makes my mouth watery. There is nothing like unfrozen off the boat fish.

    I did the same, but with extra-virgin olive oil, and a few beans tossed with garlic and regular olive oil. Because I guess I just love to complicate things.
    I love the idea of keeping it simple though: a few veg treated well. I don't think I'll ever go back to fish and chips from a store after how I felt after eating this.

    My family normally pan fries fish very delicately, but poaching it looks and sounds fabulous. Always, always LOTS of melted butter.

    Thanks so much for this! When we were kids, my mother used to make haddock, potatoes and peas in the exact, same way. There is something beautiful about fresh fish and vegetables done simply with salt, pepper and butter!

    I don't know if it's a no-go in a real chef's kitchen, but I love adding mustard to the melted butter! gives it a really great taste which goes perfectly with potatoes and fish

    I´m from Iceland and this actually resembles a household dish for every icelander. Then we paoch haddock and potatoes and mash them togeather with butter and salt, and for the kids a little ketchup. May not sound that appetising but its a good and healthy meal on a normal weekday :)

    Other suggestion: instead of the melted butter, some homemade mayonnaise (egg, oil, mustard, vinegar, lemon juice & zest, pepper...) and a few firm black olives.

    I know you visited iceland, but as a norwegian, this made me remember my youth with grandma's poached cod! We normally ate it just like you made it, but we used to have some crispy fried bacon on top of the cod as well! REALLY freakin tasty, especially when grandpa just came home from the sea with the fish. It was literally hours fresh!

    I'm glad my ability to recognize a fellow Dutchman still exists (the dish was a give away tho, Sunday lunch at Grandma's, one of my favs). I'm gonna let my Grandma make this for me tho, nothing can top her cooking :) (Add a spoonful of mustard or so to the butter, it tastes so good with the carrots!)

    This is so simple and delicious, it reminds me as a kid on my grandparents farm on Prince Edward Island, they were also fishermen and made this.Thanks for sharing.Now my search is on for the clear clam chowder they used to make..

    This is what I love to see. Simple yet beautiful food. We have this meal once a week, The cod is not always this fresh but regardless its simplicity and natural goodness. And now my mouth is watering :(

    He is right about the cod. Supermarket cod and even many fishmonger poached is tasteless. Looks like I'll have to hang out at the harbour in Whitby to get my fresh cod.

    Hi Bart, nice to see someone pushing the idea of esting fish very, very simply. Most fish has a delicate flavour and drowning it in sauces and spices means you end up not tasting the actual fish. I normally bake fish in foil to keep it moist, but I'll try this boiling method next time: cheers!
    I'd probably have left the skins on the potatoes (unless they were really bad) because there's a lot of nutrition and taste just under the skin. I'd probably also have put some peas with it too: peas and fish seem to go together so well.

    I would add one whole garlic clove to the butter while melting. Garlic goes very well with fish.

    Seeing how it emphasize on freshness and how simple in ingredients and preparation... i have a feeling that this is originally a fisherman recipe :p

    Oh, first dish on food tube that I know how to make! I usualy make it straight after I have cought the fish, but I use sea water. Can use the same recipe with Pollock, just ad a few bay leaf to the water and you are rocking :) But it is best served outdoors, late at night while the midnight sun is shining bright.

    Jamie, here's a slightly simpler recipe as taught to me when I was living in Norway: Bring a large pot of salted water to a rolling boil, turn OFF the heat and immediately drop in your fresh cod steak or thick fillet. Let it remain in the hot water for exactly 10 minutes and then remove... it's done! If it was a steak the skin will easily slip off and the single spine bone will pull right out, leaving you with the most delicious, succulent fish you have ever eaten. Dip it in salted butter. It certainly is not bland.
    This technique works equally well with Halibut and a few other fish, but NOT all types. I've tried and failed with salmon and Pacific "cod" for instance, but it was no go.
    Thanks, Jamie for showing this way to make perfect fish! Most everybody else seems to only know to fry or bake fish.

    Simple but most excellent. Been following Barts fish tales for quite a while now, dont know how I missed this one. One question though, what do chefs do with their saucepan lids, they never seem to use them.

      The best food should be prepared in simple ways... So with the freshest fish from Iceland there is no choice:)
