Poor Man's Lobster
HTML-код
- Опубликовано: 13 дек 2017
- I love fish- especially crab and lobster but it's so dang expensive! But here's an easy trick to turn a piece of white fish, like cod or halibut, into a 5 star dining experience. We think you'll enjoy this quick and easy fish recipe.
Poor Man's Lobster
Cod or Halibut filets, thawed if frozen
1/2 Lemon
1 cup sugar
lemon pepper, dill seed, melted butter (for serving)
1. Fill a large pot about 1/2 to 3/4 full of water and bring to a boil.
2. Add in half a lemon, cut into 2 pieces and the sugar. Stir until the sugar dissolves.
Allow the mixture to come back to a boil for a couple minutes.
3. Cut the fish into about 1-inch chunks and add to the boiling water. Do not stir!
4. When the fish begin bobbing and float to the top, strain them out and set on a paper towel or wire rack.
5. Sprinkle with lemon, lemon pepper and/or dill seed (optional). Dip in butter- serve warm.

I grew up near the ocean in Maine. My dad used to pick up lobster on the way home from work a lot because it was cheaper than steak (years ago). I actually used to complain about having it so often because it’s not easy to eat and you smell like low tide for hours after. Now that I live in the south, I dream about lobster. I’m going back home next week, and my dad still likes lobster at least once a week.
i remember the days id take crayfish (west Aussie rock lobster) sandwiches to school for lunch, and swap for peanut butter or something else with my mates. We often used crayfish as bait for Dhufish or Bluebone Groper etc. They were worth more at market than crayfish. lol.
I live in Kennebunk. I lived in Florida for 13 years and returned home. Although I love the Gulf shrimp and crawdads, there is nothing to top fresh Maine lobster, clams and scallops off the boat. Enjoy your visit with your dad... and the lobster 🙂
I'm in AZ....quit your bellyaching! Dang.
Just about what I was thinking grew up in New Hampshire with plenty of lobster. Living in North Carolina missing those days. We had so many lobster I was upset having to clean all the ones no ones belly could take.
I have no problems smelling like low tide... that is someone elses problem ; )
Sir, after many years of watching and enjoying your videos, this was the first cook I actually tried to recreate. It came during a time of darkness, but my family had support and love. We all were so happy with the way I was able to (hopefully) cook this dish as well as you. Keep on keepin on, best wishes to you and Mrs. Shan. 🇺🇸
My Mom used to make this when I was a kid. She used Cod and substituted Sweet n low for the sugar. She boiled it just like you did, but after boiling she broiled it. She sprinkled paprika on top and brushed some more butter on, then broiled it a bit. We ate it dunked in melted butter. You reminded me of it, and now I have to make some! :)
Broiling doesn't dry it out?
@@cleot185 Not when you baste on butter.
Thanks for sharing the sweet and low substitution. I was wondering if I could do that and your comment answered that question.

Back in the day, Lobster was considered Poor Man's food.
I saw that on" Food:fact or fiction". They were all over the shores stacked up.
@@maitreyas.4902 Yup prisoners on cape cod, had to petition to the state to get served different types of food other than lobster.
Supply and demand.
Used to feed them to prisoners. Its basically bug meat. Delicious bug meat, admittedly.
Overly large or poorly cooked lobster is disgusting. The prisoners had a point.
When I lived in Alaska in the 80s, I caught hundreds of pounds of halibut and cooked it every way you can think to cook fish, including boiling it for poor man's lobster. We did it fondue style for a house party and it was so fantastic. Lemon and butter is all they need.
I am vision impaired, almost totally blind, and I love to cook. My husband and I both love lobster and crab. Thank you so much for this recipe. I also want to thank you for doing an excellent verbal description along with this recipe. I can’t tell you how many food videos on RUclips I cannot access because they are all music and no talk. I have subscribed to your channel because I appreciate the way you did your video with talking along with the pictures. Not all cooks can see, and I wish the other food video makers would think of this when they put up their videos on RUclips. I wonder if I can very gently use the back of a spoon to touch the top of the water and tell whether the fish pieces have come up to the top. I will have to try that.
Barbara we thank you both for watching and God bless you
Barbara:
Here's a possibility: First, establish how long it takes for the fish to float. If you use the same amount/initial-temperature of fish and same amount of boiling water each time, it should be done when the timer goes "ding!". Secondly, a steamer basket and appropriate-diameter pot should simplify getting all that fishy goodness out of the boiling water; an attached piece of stiff wire could serve as an extended handle to lift the basket out of the boiling water. I'll leave the challenge of handling the hot fish chunks up to you as I have run out of ideas. 🙂 Good luck! I wish you much fishy eating!
I live near the ocean and I eat a lot of seafood. I was surfing youtube and came across this video.
I wondered how this would compare to real crab or lobster, and was skeptical, to say the least.
I went to the store and picked out 4 pounds of Haddock, which has a thick firm white meat.
We followed your instructions and cooked one of the filets to try before cooking the others.
Needless to say, the taste was incredible and we turned around and cooked all the fish right then.
The wife and I sat there stunned and amazed at the taste and we ate all four pounds in one sitting.
It was absolutely amazing, thanks for the recipe. This will save me tons of money as we have had a habit of spending $100 at a time for crab legs. I will still eat the crab, but now I don't need to buy as much.
Glad you enjoyed and glad we could help
I'm on a budget and I can't afford to waste money but does it really have the taste/texture of lobster?
Try buying "imitation crab" in vacuum packs (cooked & prepped already, looking like crab/lobster meat) It is so CHEAP, and has the sweet taste & perfect texture of crab or lobster claws. It is ready to eat as is, cold, or used in any recipe calling for crab/lobster meat. It is used a lot in Japanese cooking, and called "surimi". You will be amazed at the wonderful taste/texture of this inexpensive food!!!
Also the 'imitation crab' (basically pollock, mixed with egg white, sugar, & bits of other fish & shellfish, formed into a paste & cooked & served cold or can be cooked) is called not only "surimi" in Japanese stores, but "Kamaboko". Kamaboko is almost always the "crab" used in making "California Sushi", which uses "crab" & avocodo as the main sushi filling. Imitation crab is much cheaper than the real thing, & I actually prefer it to real crab/lobster! So next time you see/eat California sushi rolls, know you are likely eating pressed & formed pollock with other seafood/shellfish for flavor, & other binding agents. "Imitation" does not always mean the taste is sub-par compared to the 'real' thing.
@@scientifico Imitation crab, also known as surimi or kamaboko in Japanese stores, has the taste & texture & appearance of real lobster (claw meat) & crab. It is the 'crab' used in classic "California Sushi" which usually has this 'crab' & avocado & cucumber as the sushi filling. It is very popular in sushi restaurants, & many who do not like sushi actually find "California rolls" to be delicious! (Pollock is the main fish used to make the 'imitation crab".) It is usually very cheap, & already cooked, so can be eaten as is, or used in any recipe calling for use of crab or lobster, usually.)

Monkfish was called “Poor Man’s Lobster” due to its consistency when cooked. A very meaty fish. Tasty. Makes great fish and chips. Highly suggest trying it for those who haven’t. Very unpleasant looking meat until you cook it.
There is also a fish called Loche in the North West Territories, Canada. Very similar to Monkfish and excellent fish and chips as well.
Saw some other lobster stories from Nova Scotia being posted. Will confirm them to being true. My kinfolk were cattlemen and farmers. We used lobster for fertilizer. That was a practice well into the late 70s. Some of my friends came from fishing families. They were looked down at school for being poor when they brought lobster sandwiches instead of PBJ like everyone else.
Great channel. Subbed and liking videos. Looking forward to trying some recipes as I break in a new Lodge skillet.

Halibut is just about as good as lobster, and almost as expensive! Glad you used cod. I'm totally going to try this!
Hallibut is actually more expensive than lobster depending on how you look at it and how you are buying it.
Last time i was selling it halibut was 24$ a pound. Fresh.
Lobster tail was about 16 to 20 per pound for a frozen tail.
The thing about lobster is that its usually less per pound than halbut but it doesnt fractionalize as well.
You can buy a half pound of halibut. Its harder to buy a half pound of lobster. If you find just lobster meat, like someone cleaned a lobster out and sold the meat, that would be really expensive. Lagostino is a good option for that as the taste is really the same.
Depends on where you are too Nd fresh vs frozen and what not.
And....
Just bought 2 pieces of Halibut @ 30.00 each! And I could have bought cod instead!! Dam!!
I live in Alaska, we have fresh Halibut but no Lobster. We make poor mans Lobster a lot, have for years.
I have heard from friends who have visited Alaska that fresh halibut up there in Alaska is so, so much better than any halibut available elsewhere. Sure wish we could get real, fresh caught, Alaskan halibut here in Mississippi.
My father fished for years in Alaska out of Sitka. I was so spoiled with Alaskan halibut. Miss eating the fish and miss my Dad!
KesselRunHero - well, it’s not quite as easy as that to get a good tasting catfish. Granted, catfish that is “on flavor” as they say in the industry is mighty fine eating when fried up just right in some good corn meal batter. But, catfish caught out of a river or lake is hit and miss. They are bottom feeders and take on the flavor of what they eat. Many catfish taste literally like dirt. Farm raised is best in my view.
I would go for king crab over lobster.
KesselRunHero have you ever skinned a catfish?

Nothing “poor” about Halibut. It’s $25 a pound where I live.
DL Vox I remember back in the early sixties Halibut was inexpensive and mom would purchase to feed a family of eight. My grandma told me that many years ago goose was always served for Thanksgivings. Goose was the poor mans turkey. And now, turkey is cheaper than goose.
Store bought... get that same amount at a restaurant and drop at least $100
I prefer COD better
Nothing poor about Cod either actually buying Lobster by the pound is cheaper then Cod and halibut
edward monroe and especially now. All the fisherman have been crushed. It’s a huge fishing industry bummer.
We made this for dinner tonight. I don’t know that I’d say it tastes exactly like lobster, but it was very good. It was closer to the flavor of lobster than crab, but I’ll bet if you use a little more sugar then it would be a little closer to the flavor of crab, since crab is sweeter. And another great thing is that it doesn’t make your house smell like fish.
The stench of a crab in the house is horrendous 😂😂😂😂
so youre telling me you made lemonade and then tossed some fish in it and called it a day?

Hey kent, here is a little trick, if you have a couple of wooden stirring spoons, if they are long enough, lay them on the top rim of the pot a couple inches apart parallel to each other, like a 2 hand rail wooden bridge, the foam will rise up to the spoons, but it will not boil over, i don't know science wise why it works, but it does, from a rural ky. Irishman
Probably works the same way as laying your finger across the top of glass of Coke to prevent it from foaming over.
I wonder if it will work on macaroni or rice?
Dip your **** in the water before hearing up, that’ll keep that foam from rising over the rim.
Mr.Rollins I tried this and it was pretty good. I just wanted to tell you I'm from Maine and a little trick my Mom showed me to help the pot not boil over just lightly grease the top of the inside of your pot and this will help it so it will not boil over. Try it ot works wonderfull. Thanks for the cooking lesson.
Back in the day, (my day anyway) Monkfish was thought of as the poor man's lobster, as it mimicked both the taste and the texture of the genuine article. Today Monkfish costs as much, if not more than real lobster.
My mother and I ate and LOVED monkfish forty years ago when we were on WeightWatchers. It was cheap, and it was a good-tasting way to get our 5 fish meals in.

Here's the ultimate version of poor man's lobster. I read this in a magazine back in the seventies and brought home a mess of gar the next time I went deer hunting. It included salt garlic powder and onion powder in addition to the sugar and lemon. It also called for a longer boil. It recommended using a machete and hammer to cut the gar into one inch wheels (clean the guts out after chopping). Boil the wheels still encased in armor. Drain, let cool a little then pop four individual nuggets from each wheel. Serve with lemon and drawn butter or enchilado. I killed a lot of gar after that. That dish was excellent. I no longer eat fresh water fish (mercury)but this reminiscence has me thinking about a gar roundup.

What I learned today: boiled lemonade + cod = lobster
😂 Pretty good trick huh? Only works for people who don’t know what lobster is.
In Maine we know better. You can also make stone soup and call it fish chowder.
Thanks for ruining the video for me
@@swingsetoriginal maybe you should watch the video instead of lurking the comments 😂

I am never get enough Cowboy Kent “that’s what I call fine dining”
Just tried this today Kent. Very impressed!! I was cooking on a hot plate of sorts, so it didn't get to a full hard boil...but it did boil. And I didn't have lemons, so Just used lemon juice out of a bottle...worked fine. I used Cod as well. Very tasty bro! Glad I bought 2-2lb. bags!!
"Take this cod, always pat it dry with a paper towel or something like that" then submerges it in water, lol. Great video, gonna try it when I catch a walleye out of Lake Michigan, Thanks !
Did this work with the wall eye? I have some outta lake mich too
Walleye is one of the best fish in the world! I wish I could find it at local restaurants.
@@glock907 Absolutely! Do NOT do this to a walleye! Perch, Great Northern - Heck, maybe try it on a bullhead - but NOT a glorious walleye!
@@horseman4now lol! I agree walleye is one of the best fish around. I do like this with cod, I use the recipe with old bay seasoning. I think it’s good.
March 2, 2018. I made this poor mans lobster with Cod just like you showed me and it was FANTASTIC.
THANKS.
Thanks Charles and glad you enjoyed
I used 'imitation crab" to make a fantastic thick & creamy chowder! (Main igred.in the 'crab' is pollock, but often in preparing the 'crab' one of the ingredients used in flavoring is a bit of real lobster, clams, shrimp, etc. so be careful if you have allergies to shellfish) The other secret in my chowder was the addition of Philadelphia cream cheese melted into the chowder, which both flavored it & added to the creamy rich texture.
@@karenkaneshiro9861 are you a REP for imitation crab? That stuff is disgust plus. You don't know what part of any fish you are eating. Please stop recommending garbage.
@@mystre3550 lol this video is literally about how to make a version of imitation crab. Be more specific and maybe we can find out what delicious fish part you ate.
@@rastapasta774 😂😂😂 this video is about making POOR MANS LOBSTER. NOT IMITATION CRAB YOU DUMB FUCK.
I really enjoyed this video!! Your a hoot!! Have a blessed day!!
I have always loved Monk Fish, the fish monger called it poor mans lobster.
Yeauuuppp. Me too.
I never see Monk fish at the stores.
@@cindymarks4758 I think you will have to go to a fish market that's where I always use to buy it. I would sometimes see it on a menu. It is TASTY. Good luck
the Monks eat monk fish
@@cindymarks4758 I find it (sporadically) at Whole Foods
I love how you divide those portions haha. I'll have to try this.
So yummy looking. Really great.

Man thanks! What a great recipe! All your recipes are great. Every one I tried worked. Forgot to say thanks.
“That’s me, this is her” as he spreads that 80/20, his and hers 😂
Thats how i be when me and my girl split food lol
Don’t forget the dogs! He’s a good and honest man. Lol
Yeah, I noticed that. Perhaps she's a tiny woman, and don't eat much? lol!
I'll take the big portion, thank you, and then some!
My motto is; If I do most of the cooking, Then I get to do more of the eating!!
I’m literally in LOVE with the kitchen design
The tin ceiling on your wall is great. And the knotty pine cabinets are grand as well.
God bless, and Merry Christmas.
Thanks and God Bless you and Merry Christmas
My friend just installed the same backsplash and its plastic from home Depot
It's tin on his soffit. The soffit is not apart of the wall. It makes the cabinets flush all the way to the ceiling.
+Eric Warner lol a soffit is the underpart of the overhang on the exterior of the home...its called a backsplash
@@mikehickman3635 look up what a kitchen soffit is.
hey Kent, thanks for all the great videos...learned a lot watching them. Here's a tip from my kitchen, leave a wooden spoon in the pot and you will greatly reduce boil over
