even I know you dont use a rolling pin when dealing with a mixture which relies on air to give soft fluffy results. just use hands to gently shape the dough
Perfect ... almost .... may I make a suggestion, use sour or at least stale milk it gives the scones that extra something. If you try it once, I promise you that you will be willing the milk to go off.
Can you use lactose free milk in this or it has to be full cream milk? I’m a little lactose intolerant so I was thinking of using lactose free milk to replace all of the milk+cream ingredients. Can someone advise before I start working on it?
Hola Aracely, en México es un poco complicado encontrar la harina leudante "self-raising flour". Si no la encuentras, puedes prepararla en casa de la siguiente manera: mezcla 450 gramos de harina de trigo con 3 1/2 cucharaditas de polvo para hornear y 7/8 de cucharadita de sal fina. Luego sigue el resto de la receta al pie de la letra. Suerte!

In the States we call these biscuits and they're delicious when made with buttermilk and cheddar cheese.
Use yoghurt instead of cream - makes the scones very light & they rise well.
