After watching this video on these chips I did some testing on my own. If you use large curd which has less water they turn out better. There is no difference between large or small curd when it comes to carbs and cholesterol. Also... I mixed in, garlic powder, hot pepper, paprika. I then took 2 table spoons full of the mixture and spread it on a parchment covered plate to microwave. I started at 2 minutes on high... then I add another layer of the cottage cheese mix to the top of the first layer... and put back into the microwave for another 1. After the first layer... you should just go one minute at a time until you reach the crispness you desire. The more layers you add... they become like a cracker. Each layer isn't cooked completely before adding the next... it's still raw, and that is ok. I make one big circle and break it up into the pieces I want. Adding a little cumin and using for nachos, or dipping... is FANTASTIC!

I spread thin layers and microwaved per your instructions and every chip turned out and was consistently crisp and in chip shape. I seasoning prior to cooking. They came right off the paper.

New observations. I made them again today. I put normal cottage cheese in the Bullet to smooth it out with added seasoning. I took someone's suggestion on this page and cut my silicone pad to fit my microwave, great suggestion btw. I placed the chip rounds on the pad in a wreath shape, keeping the center open. Did the 5 minutes 50%, the took it out as it was light browning and took it off of the pad and cooled it onto a cookie rack. Started a second batch on the pad, took them off to cool then .. I put the first batch in the microwave again to darken them and like the double fried fries, it crisped them up perfectly. 3 minutes 50%. But don't leave the area, listen to the crackles and keep checking in on the chips. Delicious. I out the left overs in the fridge, two days later, still crispy. Thanks for the suggestions. I can pick up the seasoning flavours at the Kernels popcorn booth at the Mall. Keep inspiring.

I used walmart's full fat cottage cheese, and pork panko crumbs, along with flavor seasonings ( onion, garlic, dill, and healthy hidden valley ranch dry seasoning. - it took some experimenting with microwave timing. Also, I followed your idea to use my microwave plate (drew a circle around the plate with my silicone mat underneath) and cut it into a circle to fit the plate perfectly - Using the silicone worked even better than the baking paper.

I used the lower fat Breakstone cottage cheese - individual serving size. I spooned 6 good sized spoonfuls onto parchment and put them in at full power for 2 minutes. They weren’t done so I cooked for another 2 minutes. They were not perfectly crispy, but I was too impatient to cook longer! Delicious! Because mine were still a little soft I rolled them (cheese stick anyone? 😂)What a delicious little snack! I’m doing WW, not keto, so for me these were 2 points. With cheese being so high in WW points I pretty much only eat cottage cheese. Having this option is wonderful!

I made this today! I used a round silicone (silpat) mat (fits a pie pan) and placed it on a microwavable plate (for easier handling). First try, I used 1/4 cup Daisy small curd CC and 1/4 tsp xanthum gum and put 4 globs around the outside of the mat. For my microwave, I did 4 mins at 60% power. At that point, all the globs had pretty much joined into one circle! I microwaved another 2 mins at 60% and it was done. After a few mins of cooling, I used a pizza cutter to make them into small squares. Dipped them into my keto ranch dressing and it was yummy and crunchy!
I then made it again, this time 1/2 cup of CC and 1/2 tsp xanthum gum but I spread the whole amount around the circle, forming a wreath (hole in middle). I ran it the same: 4 mins at 60%, then 2 mins at 60% but I had to run it 2-3 more times at 2mins, 60%. I think next time I will try going full power at some point after it looks uniformly cooking?

I also used dry ranch dressing powder for seasoning and frying got the thinness of chips. I swirled it in a 6" skillet and turned it over like a tortilla. Newly subscribed: I came across your channel by chance... and wow, you just massively expanded my keto horizons in one fell swoop. I immediately tried it with the cottage cheese and was extremely pleased with the result. Then I figured that you could probably do the same with all kinds of cheeses, so I decided to experiment. So far I've tried making chips with cheddar, feta, goat's cheese, camembert, emmental... even bleu cheese! Plus all kinds of seasonings. And they've all come out spectacular, with the exception of the bleu cheese (the flavor of the original pre-zapped cheese is overpoweringly strong and has to be eaten alone (i.e. can't be used for dipping, for instance). All you have to do is vary the microwave time/power and the thickness of the cheese cuts/slices until you find the right combination for each type of cheese.
Thanks a bunch, I'm going to be checking out your channel a lot over the next few days!!
