I like the channel, I'm not a chef nor am I professionally trained in the culinary field but I am told by many people that they love everything I prepare and asked frequently for my recipes. It’s nice to have that piece of paper but I actually learned from of all the mistakes I made and from other people who are veterans in this industry. As a chef of 30 years - if you wanted to mess around with the baked version - you could lightly spray them with avocado oil, and cook them lower and slower and longer to increase the "crisp" factor. Or the air -fryer.
Tip; use cheesecloth to strain the cottage cheese. Double layer the cloth, put the cheese in the middle, tie up the ends, then hand the bag off the faucet with some string. In about an hour you'll have a lot of the moisture out without making a mess as with the paper towels.
I really like having a new keto channel around. Especially one that is not pushing products during the video. A lot of the OG channels have sold out and seem to be basing recipes around a sponsor. Keep doing videos your way. I love them.

Dave, I have been watching Keto channels for several years and just let me say my all-time fave channel is Keto Twins BECAUSE they are real, mess up kind of often and make me laugh and that is why I love them so much!! For the haters eh-haters gonna hate. But your channel is growing so evidently SOME of us really like you and your personality! I would like to offer a couple suggestions. If you will use a cheesecloth or a smooth cup towel you can squeeze out the liquid in the cottage cheese quickly and easily. Also, make a bunch of parallel lines, then diagonals in both directions-triangles!!! Finally, I use ziplock sandwich baggies to portion my snacks so that whole recipe divided into however many carbs a day will cover a pretty decent amount of snack attacks!!! Great job-great channel!

For the baked ones to get crispy you should spray them with the avocado oil top of chips and bottom of tray. They get nice and crispy without having to fry them. Keep up the great work I love your content.😊❤😊

Refreshing for this day and age. I am almost 60 and have been cooking all my life. Dude! Don't even listen to the haters. I was on keto for about 9 months and it works. I lost about 45 pounds and put on muscle at the same time (working out of course). I then went off keto and have gained a lot more muscle but also fat again. I don't plan to go keto again but lower carb. People like you are helping! My time in ketosis wasn't "proper keto" but it worked all the same. Keep up the good work and don't get your blood boiled by keto "purists". IDGAF about pure keto or whatever they call it. I care about the results I get and being able to enjoy life.

Dave...I have been a professional event planner for many years. I've catered and I've worked with some of the best in the business. When my caterers, or myself are doing the food prep...I've got expectations. In my own kitchen, not nearly as much. You are cooking for yourself, not the public, not to pass a health department inspection. Your kitchen is clean, you are clean. I promise you most of the, I hesitate to call them critics, and insult real critics...so I'll take a term from TS, "Haters" are slobs, watching on their oversized phones instead of being in the moment of wherever they are, whatever they are doing (watching their children, spending time with their families, but instead, here they are, face in screen, eating out of bags with dirty hands, shoveling enough junk into their gullets to feed the disease process for ten). I know because I see them doing this at events where an individual has spent thousands to provide a memorable experience and instead they are head down, eyes on phone. They have no appreciation for real food, even when you attempt to emulate the fave "junk" food with a reasonable real food substitute. I've done keto, I've done everything and I probably could be considered a professional dieter. Your point about sustainability is 100% spot on. The best diets do not work when one can stick to them long term. Diet that work but do not allow you to develop habits to continue for a lifetime fail. Most diets fail because even if weight is loss, one cannot stick to it. Or having lost the weight, goes back to eating and habits that got them overweight or obese in the first place. This doesn't work. "Definition of insanity: keep doing same thing, expecting different outcome." This defines most eating behavior, before, during and after any attempts at weight loss. You are trying to both learn, practice, and teach sustainable dietary changes to achieve your goals. I've watched enough of your videos to know you are real, personable, and your commentary both furthers the purpose of the video and is entertaining and makes you watchable. You are not merely chatting to run up your watch count like 90% of the youtubers and tictoc jack@$$3# out there. I will not watch most of the so called pros with their click bait titles and being paid per click, paid for pushing product. Generally, if I only watch a video if I cannot find what I need in print to simply read. I hate watching these idiots and their so called influential behaviors. Your recipes TASTE good. You amuse me. All of that said...people are bold when they are sitting behind the anonymity of a screen. Keyboard warriors are cowards. They will say anything but face to face, speak nothing... they are as Ray Bradbury writes in Fahrenheit 451: "Cram them full of noncombustible data, chock them so damned full of ‘facts’ they feel stuffed, but absolutely ‘brilliant’ with information. Then they’ll feel they’re thinking, they’ll get a sense of motion without moving. And they’ll be happy, because facts of that sort don’t change. Don’t give them any slippery stuff like philosophy or sociology to tie things up with. That way lies melancholy...We bombard people with sensation. Your channel has grown by almost 20k subscribers since I found you. I think you’re doing it right. Keep going. Love your channel. I was a keto purist but now I am just doing the best I can. The cost of some items makes it difficult.
I wonder if you could use Ricotta Cheese, as a replacement? You make me laugh. I’ve been a veteran of cooking almost everything for years, and I would never discourage you in any way. I think you’re great, and I’ve been on Keto for over 8 yrs.
Definitely! Google shows a lot of substitutions between the two. I think the key to any ingredient swap is the function, texture and taste of what your recipe requires. So, if using ricotta you'd need a drier version (I think ricotta insalata?) or spend at least 24hrs draining it in a colander in the fridge. Lactose and I have an uneven relationship 😅, so based on the texture I see in the video and the function the cottage cheese serves in the recipe, I'd either go with strained tofu or strained Greek yogurt/labneh and see how it goes.
@@ketokarbs3671 Ok. Love that "sigh". 🙄 My suggestion was well meant and my experience with ricotta is that it is wet, perhaps wetter than the recipe calls for. I never said it was wetter than cottage cheese, I just tried to make a suggestion based on the ingredient in discussion and what I would attempt since we're now riffing on the recipe. If you have personally found that you don't need to do any additional draining when using ricotta in certain ways, fine. You speak on that then. I'll speak on my experiences.

For certain I've never seen a lactose free ricotta at my Walmart, but I admit I haven't scoured every grocery store in my area (lazy shopper). But thanks for the heads up about the lactose free ricotta and if it's an affordable get then I'll give it a go.

I'm glad you're not letting the negative comments get to you, there's definitely fewer of those sorts of people than the ones who appreciate that you're trying these recipes and sharing them with us. If someone hasn't mentioned it already, there is something you can do to make straining cottage cheese easier, and that's by using cheesecloth. You can drape the cheesecloth over a bowl, put your cup of cottage cheese in the center, then gather up the edges until you have a ball, and then squeeze it like a sponge until the liquid stops draining. Some cheesecloth (not all) can be washed and reused, so it would also help save some money on paper towels.

Suggestion. Strain and then measure a cup of the dried cottage cheese. That will eliminate variability between brands of cottage cheese. And spray your baked ones with oil before baking to get the crispness.

You could try coating the parchment with oil, laying down the triangles, then coating the triangles in oil. Then, bake. That might give more of the fried taset and texture while getting more done per batch.

For a homemade nacho cheese flavor, blend extra sharp cheddar cheese with garlic and onion powders, sodium citrate, and cream to create a cheese sauce. Spread this mixture on parchment paper and place it in a food dehydrator. Once dried, grind it into a powder using a food processor.

I think you are doing fine. I have been gluten free for 8 years and I am watching carbs but not specifically doing keto. Watching your videos I am going to try the recipes you show. NOT being able to snack is a big deal. I like that your food isn't always perfect I like your channel because its real!
I've been Keto for 4 years. You can snack...as long as you stay within your daily macros. The macros are key. BTW: I count "total" carbs. I used to count "net" carbs but got stuck and couldn't lose anymore weight, so I switched to total carbs and started losing again. Been counting total ever since. There can be a lot of difference between Net and Total, and that can be the difference between success and failure (or at least stall). Stay away from bad oils. Only use avocado oil, coconut oil, and lard. There may be another one that I can't remember right now. For sure no vegetable oil, canola oil, seed oil, etc.
@@DiRidpath Tallow!!! I make bone broth about once every month or two. I get 10 pounds of beef bones from the butcher and instant pot them for about 6 hours, strain/pour all of that into large casseroles to cool. The tallow hardens at the top. Scrape that off, break it into manageable pieces, and freeze it in baggies. Then i use a muffin tin to freeze the broth into “pucks” that I also freeze in ziplocks and use for flavoring, sipping, whatever (I LOVE to make egg drop soup with it!!). It’s delicious!! But the tallow has a super-high smoke point so it’s GREAT for frying so very safe, good for you, and 0 carbs!!!

These look really good. I'm a 63 year old who was taught by one of the best cooks in the world, my mother in law. Personally I would drain the cottage cheese in a jelly bag. It may take a few hours but I'm retired and have the time to prep and go read a book or watch YT videos. And just one tip: measure your ingredients away from your mixture, not above it. I can't tell you how many times the salt has decided to pour out so fast it overflows the measuring spoon and ruins the batter or dough. Same with liquid ingredients. And thank you for teaching me how to cream the cottage cheese. A recipe I tried told me to use my mixer but it was still lumpy. Never thought of using my Ninja. Thanks for that!

The low fat version of Good Culture Cottage Cheese would not need to be strained at all because it’s not soupy like the off brand cottage cheese is, frankly even Knudsen is soupy compared with the low fat GC. Great idea for a replacement snack by the way! It’s refreshing to see someone cooking with real life struggles like we would in our kitchen trying to replicate the recipe, so thanks for being real.

Just a cooking prep tip Dave, you can drain cottage cheese and regular yogurt using a paper coffee filter in a strainer.
cheese cloth or dish towel too and they are washable too boot.
My grandmother used to use stockings to strain ricotta cheese 🤣😂

I would like to offer a couple suggestions. If you will use a cheesecloth or a smooth cup towel you can squeeze out the liquid in the cottage cheese quickly and easily. Also, make a bunch of parallel lines, then diagonals in both directions-triangles!!!
Finally, I use ziplock sandwich baggies to portion my snacks so that whole recipe divided into however many carbs a day will cover a pretty decent amount of snack attacks!!! Great job-great channel!

Dude! Don't even listen to the haters. I was on keto for about 9 months and it works. I lost about 45 pounds and put on muscle at the same time (working out of course). I then went off keto and have gained a lot more muscle but also fat again. I don't plan to go keto again but lower carb. People like you are helping! My time in ketosis wasn't "proper keto" but it worked all the same. Keep up the good work and don't get your blood boiled by keto "purists". IDGAF about pure keto or whatever they call it. I care about the results I get and being able to enjoy life.

As a rule, I do not comment reviews, especially NOT on RUclips. I'm only writing this because I see your hurt and dismay and I seek to encourage you. Dave...I have been a professional event planner for many years. I've catered and I've worked with some of the best in the business. When my caterers, or myself are doing the food prep...I've got expectations. In my own kitchen, not nearly as much. You are cooking for yourself, not the public, not to pass a health department inspection. Your kitchen is clean, you are clean.
I promise you most of the, I hesitate to call them critics, and insult real critics...so I'll take a term from TS, "Haters" are slobs, watching on their oversized phones instead of being in the moment of wherever they are, whatever they are doing (watching their children, spending time with their families, but instead, here they are, face in screen, eating out of bags with dirty hands, shoveling enough junk into their gullets to feed the disease process for ten). I know because I see them doing this at events where an individual has spent thousands to provide a memorable experience and instead they are head down, eyes on phone. They have no appreciation for real food, even when you attempt to emulate the fave "junk" food with a reasonable real food substitute.
I've done keto, I've done everything and I probably could be considered a professional dieter. Your point about sustainability is 100% spot on. The best diets do not work when one can stick to them long term. Diet that work but do not allow you to develop habits to continue for a lifetime fail. Most diets fail because even if weight is loss, one cannot stick to it. Or having lost the weight, goes back to eating and habits that got them overweight or obese in the first place. This doesn't work. "Definition of insanity: keep doing same thing, expecting different outcome." This defines most eating behavior, before, during and after any attempts at weight loss. You are trying to both learn, practice, and teach sustainable dietary changes to achieve your goals.
I've watched enough of your videos to know you are real, personable, and your commentary both furthers the purpose of the video and is entertaining and makes you watchable. You are not merely chatting to run up your watch count like 90% of the youtubers and tictoc jack@$$3# out there. I will not watch most of the so called pros with their click bait titles and being paid per click, paid for pushing product. Generally, if I only watch a video if I cannot find what I need in print to simply read. I hate watching these idiots and their so called influential behaviors. Your recipes TASTE good. You amuse me.
All of that said...people are bold when they are sitting behind the anonymity of a screen. Keyboard warriors are cowards. I wonder if you could use Ricotta Cheese, as a replacement? You make me laugh. I’ve been a veteran of cooking almost everything for years, and I would never discourage you in any way. I think you’re great, and I’ve been on Keto for over 8 yrs.
Definitely! Google shows a lot of substitutions between the two. I think the key to any ingredient swap is the function, texture and taste of what your recipe requires. So, if using ricotta you'd need a drier version (I think ricotta insalata?) or spend at least 24hrs draining it in a colander in the fridge.
Lactose and I have an uneven relationship 😅, so based on the texture I see in the video and the function the cottage cheese serves in the recipe, I'd either go with strained tofu or strained Greek yogurt/labneh and see how it goes.

@@ketokarbs3671 Ok. Love that "sigh". 🙄 My suggestion was well meant and my experience with ricotta is that it is wet, perhaps wetter than the recipe calls for. I never said it was wetter than cottage cheese, I just tried to make a suggestion based on the ingredient in discussion and what I would attempt since we're now riffing on the recipe. If you have personally found that you don't need to do any additional draining when using ricotta in certain ways, fine. You speak on that then. I'll speak on my experiences.

I'm glad you're not letting the negative comments get to you, there's definitely fewer of those sorts of people than the ones who appreciate that you're trying these recipes and sharing them with us. If someone hasn't mentioned it already, there is something you can do to make straining cottage cheese easier, and that's by using cheesecloth. You can drape the cheesecloth over a bowl, put your cup of cottage cheese in the center, then gather up the edges until you have a ball, and then squeeze it like a sponge until the liquid stops draining. Some cheesecloth (not all) can be washed and reused, so it would also help save some money on paper towels.

Suggestion. Strain and then measure a cup of the dried cottage cheese. That will eliminate variability between brands of cottage cheese. And spray your baked ones with oil before baking to get the crispness.

You could try coating the parchment with oil, laying down the triangles, then coating the triangles in oil. Then, bake. That might give more of the fried taset and texture while getting more done per batch.

Consider using egg white protein powder and pork rind crumbs as substitutes for xanthan gum, almond flour and whey protein powder as those a just as unhealthy as corn. To dry the cottage cheese, opt for cheesecloth rather than towels. For a homemade nacho cheese flavor, blend extra sharp cheddar cheese with garlic and onion powders, sodium citrate, and cream to create a cheese sauce. Spread this mixture on parchment paper and place it in a food dehydrator. Once dried, grind it into a powder using a food processor.

I think you are doing fine. I have been gluten free for 8 years and I am watching carbs but not specifically doing keto. Watching your videos I am going to try the recipes you show. NOT being able to snack is a big deal. I like that your food isn't always perfect

I've been Keto for 4 years. You can snack...as long as you stay within your daily macros. The macros are key. BTW: I count "total" carbs. I used to count "net" carbs but got stuck and couldn't lose anymore weight, so I switched to total carbs and started losing again. Been counting total ever since. There can be a lot of difference between Net and Total, and that can be the difference between success and failure (or at least stall). Stay away from bad oils. Only use avocado oil, coconut oil, and lard. There may be another one that I can't remember right now. For sure no vegetable oil, canola oil, seed oil, etc.
@@DiRidpath Tallow!!! I make bone broth about once every month or two. I get 10 pounds of beef bones from the butcher and instant pot them for about 6 hours, strain/pour all of that into large casseroles to cool. The tallow hardens at the top. Scrape that off, break it into manageable pieces, and freeze it in baggies. Then i use a muffin tin to freeze the broth into “pucks” that I also freeze in ziplocks and use for flavoring, sipping, whatever (I LOVE to make egg drop soup with it!!). It’s delicious!! But the tallow has a super-high smoke point so it’s GREAT for frying so very safe, good for you, and 0 carbs!!!

These look really good. I'm a 63 year old who was taught by one of the best cooks in the world, my mother in law. Personally I would drain the cottage cheese in a jelly bag. It may take a few hours but I'm retired and have the time to prep and go read a book or watch YT videos. And just one tip: measure your ingredients away from your mixture, not above it. I can't tell you how many times the salt has decided to pour out so fast it overflows the measuring spoon and ruins the batter or dough. Same with liquid ingredients. And thank you for teaching me how to cream the cottage cheese. A recipe I tried told me to use my mixer but it was still lumpy. Never thought of using my Ninja. Thanks for that!

The low fat version of Good Culture Cottage Cheese would not need to be strained at all because it’s not soupy like the off brand cottage cheese is, frankly even Knudsen is soupy compared with the low fat GC.
