Two words: Tortilla Press. I know you have limited storage but a tortilla press works for many other keto recipes and earns its keep. Roll the dough into a more narrow log and press the “chips” between two circles of parchment (parchment can be wiped clean and re-used many times!). I also make almond thin crackers/tortilla chips using my tortilla press and microwaving them. (Almond flour, egg white, seasonings).
I've seen where people add a paper towel to their press to get whatever they're pressing even thinner... hope this helps; I haven't pulled the lever on purchasing one yet~ LOL!

LOVE this. i just roll the whole thing out after the fridge between parchment to a huge thin circle (sometimes ill split it into 2 batches) & the use a round cookie cutter to punch out the chips. so good with just pink salt at the end! or ill sprinkle it after rolling it out with everything bagel seasoning then rolling that into the chips. amazing love fan for starting this.. yours are a great continuation!
Made these tonight! Some tips I learned - Freeze longer than 1 hour, being as thin as possible is required for crunch, salt a lot immediately while still wet from the oil, even if they are not crunchy they still taste good 😊 Thanks!

I haven't tried them yet, but I think it might be easier to make little balls and roll them out thin instead of making a log to cut it, since you had to then roll them to get them thin. When I try it, I'll let you know.
Without having tried it: Maybe a *Mandolin Slicer* can solve the chip-thickness effort. When the dough is tough and holds together like a cucumber it might work. That way the thickness would be always the same, below 1mm, it would be even cuts and you can go through the whole dough block in less than 2 minutes - could be enough time to not let the dough warm up too much again. Buy a *good* manolin - its worth it in the end. The chips maybe could use some sort of dusting, so they don't stick together in the bowl while slicing them up - might also help the crisp/taste. Maybe garlic powder or a spice mix + some your dry dough ingredients.

After you rolled out the 2nd batch, did you fry those in the hot olive oil? Or did you use room temp oil and add them to that like you did with the 1st batch? I don't like the thought of putting them in room temperature olive oil waiting for it to come to temp. Wouldn't it soak up more oil that way?
Since you have a tortilla press, you could use that then slide it off while still in between the parchment paper and use a rolling pin to make it even thinner if you want.
If you want to go the extra... Buy a manual meat slicer, perfect for slicing paper thin frozen(mostly😊) meats. Don't see why it will not work for these chips.❤

Before the rolling pin idea, I was wondering about using a spinning blade from a meat cutter to cut the cold roll into very thing slices. Pull from the fridge and be done slicing in 30 seconds or so... I wonder if that would work.
Drop the coconut and replace with melted cheddar (50/50) mix with almond flour. Add some salt & pepper and chicken powder. Will also bake in the oven, so they don't have to be rolled thinner than 2mm. Thanks for sharing!
Sure seems interesting, but not sure I would try these. Because it’s coconut flour. I have a love hate relationship with coconut flour. In some applications the flour works, some it does not. I’ve been making turnip fries, and even my husband doesn’t mind them. I have a mandolin and I should try slicing the turnip super thin and frying for potato chips. But I’m lazy 😜😜 I honestly don’t crave potato chips that often.
I made them thicker with intentions of making a spin on potato skins. Fried and loaded them up with cheese, bacon and green onion. Another quick few minutes of toaster oven air fryer. Success 🙌 The dough also worked for a frybread taco.😋

Ok mixed these up just now. Added 1/4 t onion powder and a pinch of salt. In the freezer overnight. Will try to slice super thin w food processor &fry them up tomorrow. I don't like coconut flour either but if it doesn't work I will use almond flour you suggested to another commenter. TY!❤

It might be worth trying. I am using arrowroot in bread, which is excellent; it tastes great because it's neutral. I made Dr. Berg bread with it, and it was amazing!!! It acts as a binding agent for the almond flour.

We added water until it came together, it’s hard to be exact because it’s going to be different for everyone. Once it comes together stop adding water.

"Low Carb Love" did a version of Heavenly Fan's fries in which she added Parmesean cheese to the mix. Obviously, not vegan but still delicious.
Parmesan or Romano cheese make are a good substitute for Nutritional Yeast if you don't have any on hand.

Maybe try cold pressed pressed avacodo oil, MTC oil, lard or tallow. Olive oil should not be heated that hot.
