You can put it into plastic wrap and twist ends to increase the density by removing all air pockets. Then, if you do not have a food processor, you can use a mandolin slicer to thin slice chips.

i recommend avocado oil! much higher smoke point, and doesn't damage the fragile olive antioxidants which shoudln't be exposed to vry high heat :). we do pay extra for olive oil, and then we sort of kill the good stuff we paid for when exposed to high heat! so better avocado, healthier and bvetter for weight loss and general health. and the flavour is mild.

I mixed up the ingredients, but not wanting to wait for them to freeze, I put only half in the freezer to be sliced tomorrow. The other half I smashed very thin on my tortilla press cut them up with a pizza cutter, then fried part of them, and air fried the other part. I liked them both, (oil) fried best. Some of them puffed up, but still tasted good. (Maybe the oil was too hot?) Not quite as crispy as expected, but quite good. I'm looking forward to slicing and frying the frozen ones tomorrow to see how they compare. Thank you for this recipe. It makes a nice occasional treat.

  • @BelindaS

I made these and was surprised! I made the dough as directed, it got stuck to my hand so I thought will just leave it. Fast forward to hours later.
The dough was not sticky and was a bit dry, not crumbly, just dry patches on surface. I rolled it out with ease. Cut out the fries and also decided to flatten some thin slices, the dough was firm enough to do this by hand.
I fried one to test oil, tried it with salt and it tasted like a potato fry, but with this hint of something else. I then fried the really thin slices. They did not stay thin, they puffed up.
They tasted just like a potato scallop. So then I did a taste test with my French fry loving son.
I put salt on a few and chicken salt on a few and asked him which he preferred? He chose the salt ones. Not once did he think it wasn't fries. Then I said describe it. He said it's like a fry mixed with a chicken gourjon. I said that's it! It tastes like a fry but with a batter. He was completely shocked when I said they were not French fries and showed him the dough.
Neither of us are keto either. I test things for my other son who struggles with over eating. So hope that helps anyone who is interested in a full review.
Have rest in freezer to try again, believe the warm dough is what made them puff or leaving it for hours lol.
Well done and Thankyou for sharing this recipe.

Yes, this lady is not only a keto recipe genius, but lovely to listen to and I agree would be a fabulous book narrator(but only if it left her time to develop more wonderful recipes) such generosity.

Thanks for the shout out for the roast potatoes, Gentleman made me lol, did try making crisps as well, found deep frying in lard did not come out very well, shallow fried in olive oil or baked were good

I've tried this before and it works much better I've found because of the additional coconut flour. Lots of other recipes don't use coconut flour. The first time I tried it a few years ago w coconut flour I knew it was better for crunchy textured foods.

It was actually really good that you were out of olive oil! Avocado oil is safe for high heat frying, whereas olive oil does not tolerate heat well. (It can burn, release free radicals and so not good for the body.)
Look forward to trying your chip recipes!

You may want to consider joining Amazon affiliate program and providing links to various supplies and tools, to help fund your great work here. That fryer is brilliant. Oh and create a digital cookbook via Amazon.

I have to do everything in stages, too.
Get out some ingredients, rest. Get out measuring tools, bowls, etc and rest. On and on until it's done. Sometimes it takes two days.
Right now I'm writing the recipes down and where I've seen them so I can have them together when I'm able to get around more.
      I love her videos, too.
