CANNING: Almost Sweet Baby Ray's BBQ Sauce

    Almost Sweet Baby Ray’s BBQ Sauce:
    4 cups ketchup
    3 cups brown sugar
    1 ½ cups molasses
    1 cup apple cider vinegar
    ¾ cup water
    3 TBSP Worcestershire sauce
    4 TBSP ground mustard
    3 TSBP smoked paprika
    2 tsp granulated garlic
    2 tsp chili powder (or can use cayenne if spicy is desired)
    2 TSBP pickling/canning salt
    1 TBSP black pepper
    Cook over medium while stirring ingredients well. This sauce is thinner than Baby Ray’s but if you want it thicker, you can add cornstarch slurry when you open the jar to use. May need a whisk to incorporate ingredients. Bring to
    a light boil.
    Yields 5 1/2 pints. Pressure can process method only.

      I think there’s a typo. The smoked paprika and salt is written down as tsp but video recipe has it as tbs. love this recipe.

    I made this today and it’s delicious!! I used red pepper flakes instead of chilli powder. I like a thicker sauce so omitted the water. I know I will be making another batch before the end of summer. One tip, always use a 1” head space when pressure canning to prevent too much siphoning. Use a 1/2” head space for water bath canning. Thanks for sharing your recipe!

    I canned your barbecue sauce last year, and am just now opening it for the first time ( used up all my hoard of store bought I already had). It is absolutely delicious! Thank you so much for sharing that recipe! It's a keeper!!

    I made 2 batches of this before Christmas- the kids and grandkids took a jar home each (along with jelly). When I got down to one jar left in the pantry, I made another double batch. It is sooooo good!!

    my family asked me what I wanted for Christmas and I said oh plz a water bath canner lol. Going to try the jelly and pickles first. Matt can help and chime in whenever he wants. We also enjoy the whole family. Love the laughter he gives you.

Poor guy! LOL So we were laughing about it right before filming and I was teasing him. hahaha You will LOVE making jellies and pckles.... and SALSA! :D

    "Siphoning"is the term for when liquids purge from jars while processing. I've made this recipe and it really is a good sauce.

    Finally got my All American! I’ll be running a test session today so I can get to canning! I’ve loved watching your videos, but have only been water bath canning the last couple years.       As a Brit it always makes me chuckle when I hear non-brits struggle with the pronunciation of Worsrt-stish...worst-tis...Worts-shish-sire sauce.
      Easy way to say it is Wus-ter-sheer Sauce. You can also drop the sheer to just say Wus-ter sauce too. Either is acceptable.

    I have just completed making a batch of this following your recipe. I used 1 tsp of cayenne in lieu of the chili powder. Otherwise I followed your recipe exactly and I just wanted to tell you it is amazing!

    love * the demo, last I used my pressure canner was day before Thanksgiving
    the hubbs went in the garden pulled the row carrots up. lol I had to do double duty . Ended up filling my All American -- Plus another canner a Presto , did 24 Pints of Carrots.
    We didn't get a Whole Turkey this year, was just us, WISH I HAD so I could done Turkey soup or broth.
    I am DEF. GOING TO MAKE YOUR Sauce * Thank You little mamma,and you tell that hubby of your don't sweat the Trolls out there, my hubby helps me Cann all the time.

    you are so sweet This was my first yr pressure canning, I was scared to death but got use to it. You make it look effortless. I have water bathed for years ,my husband invested in a pressure canner and oh well the rest is hx.

    wouldn't this make a fabulous Christmas gift with a set of barbecue utensils or a bbq apron? Now I want to can this up for gifts! I still have a fear of pressure canners so I will water bath can this...I really have to get over it I know. There are so many canning opportunities I am missing out on.

    I'm going to make your bbq sauce this weekend, it looks awesome. I'm going to water bath can it instead, I looked it up in my ball canning book and water bath is what they recommend with BBQ sauce. This video is eight years old so your little one is probably helping you in the kitchen by now. Thank you for sharing your recipe.

    My kiddo loves loves loves sweet baby rays. He has autism and has very very particular pattern of food. The only way he’ll eat anything new is with SBR! He cannot tell the difference between this and SBR! We would go through a 64oz bottle a week! That’s a lot of BBQ sauce money! Thank you lovely human for sharing this.
    I know you’ll not see this for a while, and my soul breaks for what you’re going through. You’re on my heart everyday.

    I just canned this bbq sauce tonight. It's so good. I ran out of molasses, but I substituted with maple syrup. Negl it hurt hearing Matt's voice, but I was so happy hearing it too. Thanks for sharing. Until next time.

    I just got done making this barbecue sauce. I got 6 pint jars for my pantry . I made one batch yesterday to see if we liked it. Obviously we did. So I tripled the single recipe. Thank you so much for the video.

    You mentioned the 5 lb. pressure, I use 5 lb. for 10 minutes when I can tomato juice and tomatoes. The amount of pressure will determine how tender something gets. Green beans I do 10 lb. pressure for 20 minutes meat I use 15 lb of pressure depending on what I am using the meat for and how tender I want it sometimes I use 10 lb. for meat. That is why when you water bath can you have to cook for such a long period of time because of no pressure. Love your videos keep them coming

    I have to thank you for the inspiration on this recipe. Although I used another site to get how to water bath can it, I followed along on your techniques. I find canning SO much more enjoyable now! Best tips are having the supplies set up and ready...and having the sink ready with soapy water!

      Some recipes I have seen here say to pressure can tomatoes at the 5 lbs setting, but to be safe I never use 5lbs for anything.

    Hi Heather & Family,
    You asked someone comment on where they would use 5 lbs of pressure....I believe they would use 5 lbs of pressure if they are very near to the ocean, like in Florida or other Coastal areas.
    Suggestion my friend: When you have a chance think about purchasing an immersion hand blender. Amazon has a 2 speed blender....KitchenAid KHB1231MY 2-Speed Hand Blender, Majestic Yellow for $37.99. That is what I bought because it has 2 speeds, is powerful and no need to buy an immersion blender with other attachments to spend even more $, since we have those other gizmo's in our kitchens anyway.
    The Kitcheanaid stick blender's blade is a bit above the bottom of the immersion hand stick, , so you never worry about scratching any pots, including teflon coated pots.
    I use it for just about everything like making smoothies, pureeing hot and cold soups, making whipped cream, adult drinks, mixing puddings, whipping potatoes, blending sauces, making cakes, crushing ice for snow cones and drinks, malteds, and and Greek frappe iced coffee foams up wonderfully with this kitchen gadget, as do thick malteds, as well as all my copycat Starbucks drink recipes.
    Clean up is a snap too. Just pop off the bottom and place in a large cup of hot water with a little dishwashing liquid and dunk it up and down until clean. Then rinse well and store away.
    P.S. I also learned how to make my own smoked paprika .....Easy and quick and you can make a large or small quantity as needed.
    Her is how I make it: On a flat large cookie sheet add regular paprika spice, and then add drops of liquid smoke. (I use Wrights liquid smoke). Blend with your fingers, then lightly smooth, and let stand a few days until it becomes dry. Then place in your spice jar and use.

    Hi, I pray you & the children are doing well. I just wanted to weigh in on the 5# Pressure notch on your gauge. The 5# notch would be the same as Hot Water Bath. I have never used the 5# selection. I just do the water bath.

      +Linda's Pantry YES!!!!! they sealed last night and i checked them this morning with the rings off. Not gonna lie, I was nervous this time. I had a bit of spillage. I know Ball says 1/4" and so thats what I do..... and I always have this spillage, so I think I am going to test 1/2" headspace next time to see how it turns out.... even though I dont want to recommend that to anyone since BBQ sauce is supposed to be 1/4" headspace. I dont know. Do you do 1/4" or 1/2" with your sauce?

      THANK YOU for chiming in! I know Noreen from Noreen's Kitchen said she would feel safe water bath canning this as well. Ball canning recipe has less sugar and acid and they water bath for 20 minutes. And every BBQ recipe I found said 1/4" headspace, but I am wondering if this wouldnt do a tad better at 1/2"???? All 5 jars sealed beautifully..... but man, I hate the seepage I get. I dont like wasting a drop! haha I know it happens with my spaghetti sauce as well.

      THANKS Mama!!!! Yeah we rent here and the stove is not a great quality one. the burner grates are flimsy at best. that could be my issue!

      +The Kneady Homesteader I'm looking to get into canning...I wanna can Chili, Hotdog chili, Bean soup, BBQ sauce, and other thing....I watch and learn from you and Noreen's Kitchen and Linda's Pantry. But now I'm getting scared. Did something go wrong?...Now I'm on the fence...as they say. I guess I'll work it out.

      +John Caulfield oh no dont be scared!!!!!! this turned out great! next time i am going to leave a half inch of headspace tho!!!! hahaha instead of 1/4!

    The only time I’ve used 5lb of pressure is when I replace my seal on my pressure canner then I allow it to cool and restart the process with 10lb of pressure or if I find a canner in a estate sale.

    OMG!!!! This is amazing I tweaked it a bit, according to what I had on hand & my family, but it was your base I used. YUM!! I'm with you on canning, I LOVE it & prefer pressure canning. As a matter of fact, our temps have cooled down & I'm on a canning marathon. Cleaning out freezer
