Next Level Salt and Pepper Calamari (Squid)

  • Looking for super crispy calamari (squid) rings? What about taking it to another level with garlic and parsley. Then this recipe is for you. Salt and pepper calamari is a popular bar snack at great for sharing with friends over a cold drink. It's also a great starter with a salad, in fact it can also be a main meal.
    The Addition of Szechuan peppercorns in the crispy salt and pepper coating, gives them a unique flavour and a tingling sensation. They are optional, if you're not a fan or if don't have them in stock, just use extra black peppercorns instead. It will still be great!
    These rings are super crispy by using egg wash and two types of flour.
    The calamari is soft inside with a beautiful flavour. Wait until you taste one and then see if you don't eat them all!

    I love calamari! Chef Joel, this is more than next level. Using two types of pepper and flour will definitely make this recipe delicious and crispy!     Joel, love ur recipes greatly. I am a chef and your recipes are "on" every time. Have to say, love your dog so very much. Collies have such a sympethetic look in their eyes and even as they remain still, have a swagger of calmness, obedience and pure love but also with a "seeping" excitement that knows their obedience shall be rewarded, same befitting of Saints. Too bad that more humans cannot see Truth to be as such with The One who gives them all, instead of giving all honor, glory and credit to themselves. The best venue I remember from a visit is The Clam Shack right on the coast. Their Lobster Rolls and Deep Fried Clams are legendary!!! See Ya, Mike.

    Been following you for quite some time and I love the dishes you do. At three minutes are your rings chewy ? Seems like when I fry mine after cutting them that thin they are like rubber bands. I know that people are overly cautious today about under cooked foods and maybe that is why you suggest three minutes. Thoughts ? -- Thanks, Dennis

      A lot depends on your fishmonger, but a quick tip, marinate them in some fresh kiwi juice, they will tenderize.

      I boil the kettle and pour boiling water on it (in the sink), then a quick wipe with vinegar. I also coat it in olive oil regularly. Plastic or nylon cutting boards should be banned in my books.
