SECRET to Chinese Salt Pepper Squid | Wally Cooks Everything

  • This is the only way I eat squid and that is to season it with salt, pepper, a bit of heat and lots and lots of garlic! This classic Chinese fried seafood dish is super popular in the restaurants. After watching this video, you will know how to make it at home.

    INGREDIENTS:
    500g Squid
    90g (¾ cup) Cornflour (a.k.a. cornstarch)
    90g (¾ cup) Rice flour
    1 Large Egg
    5 Cloves Large Garlic
    3 Chilis (use as much as you want)
    1/4 Small Red Onion
    1/4 Teaspoon Salt (for seasoning)
    1/4 Teaspoon Ground White Pepper (for seasoning)
    1/4 Teaspoon Chinese 5 Spice Powder (for seasoning)
    1/4 Teaspoon Salt (for flour mix)
    1 Teaspoon Coarse Black Pepper (for flour mix)
    1 Spring Onion
    Break down squid and be sure to cut in hatch marks on squid. You ONLY need to do this on one side of the squid and I prefer cutting hatch marks on the inside. This will ensure the squid will not curl much during frying.
    Now we make the seasoning. Chop garlic into small chunks but not too small or else it will burn too easy. Chop chilis and red onion and place everything into a small mixing bowl. Then add 1/4 teaspoon salt 1/4 teaspoon ground white pepper and 1/2 teaspoon Chinese 5 spice powder and set aside.
    Mix flours together and throw in 1/4 teaspoon salt and 1 teaspoon ground black pepper then mix well. Crack an egg and drop the pieces of squid in, making sure to coat every piece with egg.
    Then drop egg coated squid into the flour mixture, making sure every piece of squid is covered until it looks like powdered donuts. If you need more flour go ahead and add more.
    Heat oil to 350°F (180°C) and fry squid in two batches to avoid overcrowding the pan. Fry for 2 to 3 minutes until squid as a light yellow coating. Set aside on wire wrack or paper towel to drain oil.
    On a pan on low medium heat add 1 tablespoon cooking oil. About 30 seconds later add all the seasonings into pan. Cook for about 5 to 10 seconds then toss in the squid. Toss and mix until all fried squid is coating with seasoning, about 1 minute later add chopped spring onions and mix around for another 10 seconds.
    Then serve cause it's ready to eat! Enjoy!
