I love squid, local Chinese Restaurant used to have a good selection of squid dishes, but sadly now closed. None of the nearby takeaways seem to serve squid, so I think I'll give this recipe a try as it looks great. Mum certainly seemed to enjoy it, she was fair guzzling it down.
Very similar to the way I make it at home although I thrown in some schezwan pepper into it lol. love squid. Any thing with salt and black pepper is always great 😂
To me schezwan pepper is what makes it pepper and salt, though the fresh chilies are important too. Growing up having it the way one is used to and being served with out the stand out flavor is a disappointment.

As someone who grew up with wild caught squid, don't worry about the bicarb. Just soak it in some milk for an hour. Don't ask me why it works, but it does. Super tender. The one time I forgot to soak, super chewy. What I do want to know is, do you score the inside or outside of the squid?
As I think I said before we don’t have salt,and pepper Chinese dishes in NY.We do have squid in seafood dishes,it isn’t battered in anyway,and it’s so tough,you can never chew it,so I leave my squid eating to calamari eating,breaded with marinara sauce,nice and tender.With the way you cooked it I think it would be tender,if I can find the squid I would give that a go.

That looks fantastic! Is there any difference making it with the whole squid tubes you used versus the ready prepared pieces you showed, (expertly modelled by Choo)😁?
I just checked in to rewatch this as I wanted to see what squid you used… and I’m guessing that’s wai ye hong your mum’s at picking up the same pack of squid I bought! 😂🤓
It’s totally different from galangal, we use both fresh in Malaysian cooking, and google isn’t great with very very unknown ingredients, it’s the same family but different colour and grown in sands galangal has a root beer kind of taste while galanga is more peppery

Inside and the milk is the same as he bicarb but not as powerful, takes longer to work
