  • Here's another popular American Chinese takeout recipe favorite, Shrimp with Lobster Sauce from yours truly. It's a simple Chinese fast food seafood recipe that isn't deep fried and greasy. There's a heap of shrimp, peas and carrots plus a savory white egg sauce made with tasty chicken stock.
    ____________________________________________________
    ►Ingredients:
    160g (6oz) Peeled and Deveined Shrimp ( I had 12 pieces of shrimp)
    1 Cup Mixed Peas and Carrots
    3/4 Chicken Stock + 1/4 Cup Water
    Egg White from 1 Large Egg
    1/4 Teaspoon Baking Soda + 1/2 Teaspoon Salt (to brine shrimp)
    1 Teaspoon Chinese Cooking Wine
    1/2 Teaspoon Salt
    1/2 Teaspoon MSG (optional)

    Nice and simple. I thought there is so-called lobster sauce but no lobster at all. This is one of my favorite dish and I will try it. Thanks.

    I remembered some restaurants add black bean sauce to this. This was a San Francisco Bay Area favorite.

      You can add it to noodles if you wish. The sauce is not much different than other oyster based Chinese sauces, that is usually added to noodles 😀

    I like to coat the shrimp with corn starch too. So when I blanch it, I still have a coat outside for the shrimp. Some drop of sesame oil, and white pepper too.

    Wally, when is the lobster coming to the party? Is this like my bank account? You know, the one with no money?
    All kidding aside, thanks for this recipe. Looks easy enough. Gonna try it soon!

      @WallyCooksEverything  2 года назад

      😂😂😂 You are better off than me. Cause at least you have some money to put in a bank. I think end of month I'll actually be cooking up a lobster or two for a video, Cantonese Style Ginger and Scallion Lobster. American lobsters are expensive in Thailand but I think it'll make a good video.
      Thank you for watching and commenting as always 👍

    Hi! What does the chinese cooking wine do for the shrimp?

    • @WallyCooksEverything
      @WallyCooksEverything  Год назад

      Hi Ian, Chinese Cooking Wine is used for flavor. If you don't want to add it, it should be fine 👍

    • @ianscianablo8507
      @ianscianablo8507 Год назад

      @@WallyCooksEverything Oh no!!! I do want to flavor it! I'm doing it. Thank you! I put lots of flavor in that shrimp even before it hits the wok. I would use fresh minced garlic too but it will burn. So I sprinkle garlic powder on the shrimp and later minced garlic & ginger in the wok-all about flavor.

    Hi! If you decide not to use egg will that sauce thicken if allowed to reduce a bit on medium heat?

    • @WallyCooksEverything
      @WallyCooksEverything  2 года назад

      Hi Ian 😀 If you don’t use egg, the sauce will still thicken from the slurry which is combination of cornflour and water as shown in video.

    • @ianscianablo8507
      @ianscianablo8507 Год назад

      @@WallyCooksEverything Stupid question: does the egg, in general thicken the sauce or is it exclusively that corn starch mixture?

    How would you make this dish spicy

    • @WallyCooksEverything
      @WallyCooksEverything  2 года назад +2

      Hey Jude 😃 I’d chop up a handful of fresh chili’s and cook it up same time as the garlic so it’ll flavor the oil. Sometimes I just add a lot of Tabasco sauce right before I eat this.

    • @WallyCooksEverything
      @WallyCooksEverything  2 года назад

      Hi Pamela 😃 Yes there is a brown color sauce version. Matter of fact my mom’s lobster sauce is brown cause she adds, fermented black beans, oyster sauce a bit of soy sauce and ground pork. This version I see mostly in American Chinese restaurants in NYC.
      I will be making a brown sauce version when I can get my hands on some American lobsters 🦞

    • @WallyCooksEverything

      What’s up Greg?! 😃 It’s all in the timing buddy. When shrimps cook they curl up, when it curls to shape of a C it’s cooked. If looks like an O it’s overcooked.

    Where's the lobster?

    • @WallyCooksEverything
      @WallyCooksEverything  2 года назад

      Hi again Lynda 😀 There isn't any. So this sauce was originally made to go over lobster in Chinese cooking. My mother made a variation of this sauce whenever she cooked lobster for Chinese New Years.
      American Chinese restaurants have taken the sauce and instead of putting it over lobster, used it as a sauce for shrimp instead.
