JUICY CRUNCHY Salt Pepper Pork Chops Recipe | Wally Cooks Everything

- I'll teach you how to make a juicy and crunchy Salt and Pepper Pork Chop inspired by a few of NYC's famous Chinese-American restaurants. This tender and flavorful pork chop recipe will satisfy your Chinese takeout hunger pangs.
►Ingredients:
300g Pork Chops (cut into 2 pieces)
1/2 Jalapeno Pepper
1 Large Garlic Clove
Thai Chili (optional)
1/2 Spring Onion
1 Tablespoon Chinese Cooking Wine
1/2 Teaspoon Pure Sesame Oil
2 Teaspoon Light Soy Sauce
2 Teaspoon Cooking Oil
1 Tablespoon + 1/2 Cup Cornflour
1/2 Teaspoon Salt
1/2 Teaspoon Ground White Pepper
1/4 Teaspoon Ground Black Pepper
1 Lime (optional)
Cooking Instructions:
Tenderize pork chops with knife and cut into strips of 4 for each piece. Marinade with Chinese cooking wine, pure sesame oil, light soy sauce and cooking oil. Mix well and then add 1 tablespoon cornstarch and mix again for a few minutes. Marinade pork in refrigerator for 10 minutes.
Chop jalapeno peppers into large chunks. Thinly slice one garlic clove. Chop fresh Thai chilis if using.
In a large mixing bowl add salt and both ground peppers, then set aside.
When pork chops finished marinading drop 1/2 cup cornflour and mix well until pork chops resemble powdered donuts.
Heat oil to 350°F (177°C) I recommend frying in two batches so 4 pork chops per batch. Should take about 3 to 4 minutes to cook.
After cooking drop the freshly fried pork chops into mixing bowl with salt and peppers. Toss well to ensure pork chops have a good coating of seasoning. Then toss in fried garlic and pepper followed by fresh peppers (if using any) then toss again.
Serve with hot steamed rice or fried rice and enjoy!

I will check Maria, because I can't really find aubergine at my local market. Because there's a beef with aubergine I wanted to make once but couldn't find. I can find Thai egg plants easily but aubergine is better. I will have to research but I am definitely interested in your suggestion 😀 so I thank you!

Hello ☺ Of course you can, but don't use a cut that has too much fat if possible. I've done it before with a cut of pork belly with too much fat wasn't so good.

Corn flour and corn starch are completely different. You're using corn starch. Corn flour is primarily used in Mexican recipes. Tortillas, tamales, etc... Just saying. It could be a costly mistake for the unaware.
Hi Graham, the name of this ingredient depends on which country the flour is from. You can double check and you will see North America it’s called cornstarch. Asia primarily cornflour. It is one and the same. And cornflour is not primarily used in Mexican cooking. I believe you’re referring to masa which yes is a cornflour (white or yellow color) and used for tamales and tortillas. However, the cornflour I’m referring to is only white and used for thickening sauces and soups, frying etc.

Is corn flour the same as corn starch? May I use potato starch?
Hello JuJu yes cornflour and cornstarch is the same. You most certainly can use potato starch that’s what I use too 🙏
I noticed you are saying to use “corn flour,” but it appears you are actually using “corn starch.” These are not the same. Which do you actually use? Love all your recipes - thanks!
Hello 😃 So cornstarch and cornflour is the same. It’s called differently depending on the country you’re living in. For example for cars certain countries say gasoline or petro. Thank you for watching and commenting 👍

Mine too. I can honestly understand that. The first thing when I came home (to Sweden) was to get a pizza with pineapple! Tabu in Italy. I love them all. Italian, Swedish...The pizza culture in Sweden has taken its own direction... I think the pizzas here similar to the NY-style. Thin crust, cheese, and then all kinds of toppings.
I can always tell when my oil is hot enough… but how do i tell if its too hot?? Man this looks delicious! Definitely gonna give it a try!

Suggest you tenderise using the back of your knife. Also, get a good quality sharp knife! 😉 For large chunks of meat, I would use tongs.

We call those 'alata pepre' but for me it's not that spicy. It's okay
You can add lime powder to the seasoning in the bowl as well. Just don't go overboard with the powder till you know how strong it is, as it varies between brands afair bit. Thanks for the video, take care, God bless one and all.

Thanks for sharing your recipe. I've a question. Last step after you marinate, you added two tbsp of cornstarch. Then after you refrigerated the meat, you coated it with corn flour before deep fry. Isn't corn starch the same as corn flour ?

Omg!!! Hop Lee and Hop Kee, my brother worked there at both places back in the 90's!! Remember Peking Duck House?? That's no longer there, sad to say. A lot of old school chinese recipes have been lost, it's a shame. Love your cooking!!!!

@@WallyCooksEverythingHello Wally, First of all the Pork chop looks so Yummy. I was jut there yesterday and if you come and visit, the old school restaurant are not there anymore. The latest victim is Jing Fong which is the biggest restaurant in Cinatown. This the one across from the police precinct. A lot of Shanghai and Asian fusion restaurant are poping. You can not even get a decent pork bun anymore. Mai Lai Wah is the only place that sell them hot but now being run by the younger generation. Big Wong also closed but yesterday I saw it open again, maybe a different owner. The place that sells Bak Tong Gou, Rice Flour, Tofu on Mott Street is also close now. Also a lot of resaturant close at 9PM or maybe 10PM. The only thing that I think did not change is that PARKING you car is still a nightmare.LOL

Hi Mark 😀 Because during frying bits of flour will fall into oil. So if pre mixed the salt and pepper into flour it could be less flavorful. So best to season right after frying 👍

Most definitely, matter of fact if I could find bone in pork chops I’d use it. But seems like here in Thailand they always remove bones for pork chops 😔
