I have used this recipe so many times and it ALWAYS comes out perfectly! I moved from the Northeast to the south and here they only have a white sauce with shrimp but growing up in Boston (China Town) iI grew accustomed to THIS style...I would BEG family coming for a visit to PLEASE freeze and bring to Florida for me...(how tacky)...lol How happy I am now to make my own, thanks Gambo!

One of my favorite Chinese dishes. I know it isn't authentic Chinese but it tastes good regardless. Gambo's looks amazing. Everything he cooks looks so good. Not like all the takeout Chinese places that offer bland food.

There is still ONE place in WA state that does this dish the old fashioned way! The Red Lotus in Auburn, WA. They are the last of 4 restaurants that were owned by the same person in the 70's. The Prawns in Lobster Sauce is exactly like this and delicious!!

I see a lot of people asking why lobster is in the name. This dish was develped in America by Chinese immigrants from Toishan county as many early Amercan immigrants were from there. In Toishan, lobster is traditionally cooked this way. Thus a more accurate name may be "Shrimp with traditional lobster style sauce". The main ingredients are shrimp, ground pork, fermented black beans, garlic, and eggs, and usually green onions. Most restaurants nowadays take a short cut and skip the ground pork, the black beans, and often even the garlic. I've been disappointed everytime I've ordered it in restaurants for the last 20 years. Gotta make it at home to do it right.

      Peter,
I got the same results from many restaurants. I think some restaurants in SF Chinatown still cook the same old dish.

I lived in Chicago and fell in love with this dish from old China town and I moved to the west coast and they don’t make Chinese food here like they do in the East coast so this has made me happy and now I’m going to the Asian market to pick up the ingredients and I’ll post how it goes!!
