faye carter You could certainly do that, but I think it has more flavor when you roast it in the oven instead of steam in the IP :) Also for the Instant Pot, make sure you buy a squash that is on the smaller size, otherwise it won’t fit in there… unless you have the larger 8 quart size!
I just did this entire prep today. I have never felt so accomplished in so little time. So so so so good.... my meal prep has been a little lack luster and this got the juices flowing again! More videos like this please!!

I’m a college student trying to eat more plant based and I struggle with keeping track of food during the week. This was so helpful! Definitely will try it out!
Finally someone who remembers that kale is a bit tough without massaging. A number of years ago I fell in love with raw kale salads using the massage trick. Kale salads became popular. Eventually no one prepped the kale with massaging anymore and frankly I felt like a goat munching through the tough salads. I almost never get a salad with kale in it anymore unless I know it is properly prepped.
I love these types of meal prep - where separate elements of a dish is prepared rather than the exact same meal. I will try the wild rice dish, the combinations of seeds, rice and grains sounds very delicious

Would love more meal prep vids like this! Love that you use the different ingredients to make different combos! I get tired of eating the same thing but have to prep ahead or I end up not eating well during the busy week.

This has made my life so easy. My husband has begun the journey of becoming vegan. I still eat at least one non vegan meal and my daughter will eat it but still wants meat with her meals. Your fabulous recipes are so delicious and flavorful. My daughter loved the meals so much that she is actually considering going vegan. She did say as long as I keep making great meals like these. Needless to say I will be purchasing your cookbook and will be a life long subscriber. I love that your recipes do not use the “fast food” type items from the grocery store freezer section. This is a great video. Straight to the point wish more videos were like this. All the recipes were amazing too. Although there was a lot of unnecessary oil used I’ll be using these recipes of course omitting the oil.

I’m on the road for 4-5 days at a time, so meal prep definitely cuts down on eating out (and sometimes my job sends me to places where it’s hard to get around, or find anything vegan). I just made this yesterday as my very first meal prep and it's just awesome! Every day I am in front of the fridge wanting to eat but not prepare anything XD So this is just perfect. Everything is ready and I just have to decide what I want and put it on the plate :D I love the speed of your videos and the PDF guide is just amazing. These look so good! Although I’m one of those people who prefers to do full meals for the whole week. It doesn’t get boring for me if it’s just for a week! 💁🏼♀️ plus all those different combos are a bit overwhelming-kinda takes the convenience factor away a bit of I have to pause and do too much assembly. Just my thing but again for those who do it this way this is amazing!
@@RainbowPlantLife I usually prep three meals! So for instance this week for breakfast I had a combo of broccoli, roasted potatoes, mushrooms, black beans and corn with salsa and hummus. Lunch was roasted rutabaga, brussels sprouts and tofu with brown rice. and dinner was spaghetti squash with hummus, peas, and tempeh. the only thing I have to do day of is add the hummus and salsa in the morning and put together the dinner/ steam the squash in the microwave. BTW I made your hummus from this video and it was SOOO GOOD!!!

This food looks great to meal prep for my daughter to help her eat healthier meals. Although I am vegan I do not eat nearly this much cooked food. I eat mainly raw. The only time I will have something cook is when I go out to eat which is once or twice a month and if I'm cold in the winter I will make a vegan chili or vegetable soup. Thanks for the inspiration!

I found the PDF download to be the one of the most convenient resources for a beginner because sometimes the vegan diet can seem overwhelming and discouraging for a beginner. Your PDF makes everything so simple and straightforward. I look forward for future meal prep videos from you. Also, is there any way you could incorporate some high protein vegan meal plans in? I just made this yesterday as my very first meal prep and it's just awesome! Every day I am in front of the fridge wanting to eat but not prepare anything XD So this is just perfect. Everything is ready and I just have to decide what I want and put it on the plate :D

These look so good! Although I’m one of those people who prefers to do full meals for the whole week. It doesn’t get boring for me if it’s just for a week! 💁🏼♀️ plus all those different combos are a bit overwhelming-kinda takes the convenience factor away a bit of I have to pause and do too much assembly. Just my thing but again for those who do it this way this is amazing!

@@RainbowPlantLife I usually prep three meals! So for instance this week for breakfast I had a combo of broccoli, roasted potatoes, mushrooms, black beans and corn with salsa and hummus. Lunch was roasted rutabaga, brussels sprouts and tofu with brown rice. and dinner was spaghetti squash with hummus, peas, and tempeh. the only thing I have to do day of is add the hummus and salsa in the morning and put together the dinner/ steam the squash in the microwave. BTW I made your hummus from this video and it was SOOO GOOD!!!

Alternative tofu-draining: use an old, thin dish towel. No need to waste paper towels. Reusable. I also use one for cream-cheese-making

This food looks great to meal prep for my daughter to help her eat healthier meals. Although I am vegan I do not eat nearly this much cooked food. I eat mainly raw. The only time I will have something cook is when I go out to eat which is once or twice a month and if I'm cold in the winter I will make a vegan chili or vegetable soup. Thanks for the inspiration!
